- Salt your pasta water: Make sure to add enough salt to the pasta cooking water, otherwise, the pasta will taste bland. One pinch is not enough, the water should taste salty.
- Do not overcook the pasta: I follow the pasta package directions but often reduce the cooking time by one minute, to ensure that the pasta is al dente.

Vegan Pasta Recipes: Avocado Pesto Pasta
- 7-8 oz (200-250 g) pasta of choice
- Pasta water to thin the pesto
- Cook the pasta according to package directions, then drain the pasta water into a bowl and save some of it.
- Add all ingredients for the pesto to a food processor and blend for about 20-30 seconds.
- Slowly pour in a little pasta water (start with 1/8 cup) and blend again. Add more pasta water if you prefer a thinner sauce. Taste it, and add more salt, if needed.
- Pour the pesto sauce over the cooked pasta, serve and enjoy!
