Asian Vermicelli Stir-Fry

Make a super satisfying Korean-inspired vermicelli stir-fry in under 30 minutes! The stir-fry noodles are packed with flavor, filling, satisfying, easily customizable, and simple to pull together on busy evenings!

Ingredients

  • 7 oz (200 g) vermicelli noodles (see notes)
  • 2 tsp sesame oil
  • 1/2 heaped Tbsp fresh ginger grated
  • 2 cloves of garlic minced
  • 3.5 oz fresh (100 g) shiitake mushrooms chopped
  • 1 medium (100 g) carrot sliced into fine sticks
  • 1 medium (125 g) red bell pepper sliced into fine sticks
  • 1 heaped cup small (80 g) broccoli florets
  • 1 cup (90 g) white cabbage thinly sliced
  • Green onion to garnish
  • Sesame seeds to garnish
  • 1 batch of Korean BBQ Sauce (click)

Instructions

  • You can watch the video in the post for visual instructions.
    First, prepare the noodles according to their package directions (I soaked vermicelli noodles in warm water until tender), then drain.
  • Meanwhile, peel and mince the garlic and ginger, chop the mushrooms, cut the broccoli into small florets, and thinly slice the carrots, cabbage, and bell pepper.
  • Then, heat the sesame oil over medium heat in a large skillet or wok. Once hot, add the ginger and garlic and sauté for a minute.
  • Add the remaining vegetables (mushrooms, carrot, bell pepper, broccoli, and cabbage) and stir to combine. Then cover the pan with a lid, reduce the heat to low, and allow them to cook for 7-8 minutes, until tender (not mushy).
  • Add the prepared noodles and Korean BBQ sauce and stir well, then serve in bowls garnished with finely chopped green onion and sesame seeds. Enjoy!

Notes

  • Noodles: Use rice vermicelli or mung bean vermicelli (aka glass noodles/cellophane noodles/mung bean threads/bean thread noodles, etc.). You could also use dangmyeon or japchae noodles (sweet potato starch noodles), which are all naturally gluten-free. Other noodles work, too, like stick rice noodles, udon, buckwheat, etc. (cooking methods vary).
