Spinach Pasta Sauce
This green spinach pasta sauce is fast (8 minutes!), easy, healthy, and super delicious. It’s creamy, garlicky, and packed with nutrients – for a simple dairy-free, oil-free, nut-free, midweek meal the entire family will love!

3 oz (90 g ) fresh spinach 1 handful of fresh basil 1 cup (240 ml ) light coconut milk (canned) (or any other dairy-free milk) 2 tbsp nutritional yeast 1 tbsp cornstarch or potato starch 2 cloves of garlic 1 tsp onion powder ⅓-½ tsp salt (or to taste) Black pepper to taste 1 pinch of nutmeg

Blend all ingredients in a blender until completely smooth. Transfer the mixture to a saucepan and bring it to a boil, stirring regularly.
Let it simmer for 1-2 minutes and stir frequently.
Serve with cooked pasta (or grains/potatoes) and enjoy.
