Vegan Pasta Recipes: Avocado Pesto Pasta

This avocado pesto pasta is creamy, silky, rich, and loaded with heart-healthy fats, omegas, and antioxidants.

Pesto Sauce

  • 7-8 oz (200-250 g) pasta of choice
  • Pasta water to thin the pesto

Instructions

  • Cook the pasta according to package directions, then drain the pasta water into a bowl and save some of it.
  • Add all ingredients for the pesto to a food processor and blend for about 20-30 seconds.
  • Slowly pour in a little pasta water (start with 1/8 cup) and blend again. Add more pasta water if you prefer a thinner sauce. Taste it, and add more salt, if needed.
  • Pour the pesto sauce over the cooked pasta, serve and enjoy!
