WHAT YOU WILL NEED

Combine all dry ingredients (almond flour, coconut flour, flax seeds, baking powder, pumpkin pie spice, and sugar) in a bowl.

STEP 1

Stir with a whisk to combine. It's also possible to process all dry ingredients in a food processor or in a blender.

STEP 2

Add the wet ingredients (pumpkin puree, peanut butter, and vanilla extract). If using a food processor, just add them to the machine.

STEP 3

Mix with a hand mixer or a fork. If using a food processor, just process until the dough is crumbly and sticks together.

STEP 4

Then use your hands to knead the dough until it comes together. It should be smooth and managable.

STEP 5

Shape the dough into cookies and place them onto a lined baking tray. Then bake in the oven for 13-15 minutes.
