Vegan Omelette Recipe  (No Tofu)

Enjoy a nutrient-dense, flavor-packed vegan omelette (‘omelet’) with vegetables using simple ingredients and 20 minutes!

This recipe is dairy-free, egg-free, and even soy-free (no tofu) and can be served as a light breakfast, brunch, lunch, or dinner!

WHAT YOU WILL NEED 

Heat 1-2 tsp of oil in a large pan, and then add the finely chopped onion, bell pepper, and mushrooms.

STEP 1

Sauté the vegetables for a few minutes until they are softened, then turn off the heat and set the pan aside.

STEP 2

Combine all the dry ingredients (ground lentils, tapioca flour, salt, black pepper, cumin, smoked paprika, Kala namak, and turmeric) in a medium-large bowl.

STEP 3

Stir the mixture until combined, then add the cooked veggies and fresh herbs (I used parsley) and stir again with a spoon.

STEP 4

Once the pan is hot, pour in half of the vegan omelette batter. Spread it evenly over the pan with a spoon and allow it to cook for 3-4 minutes.

Then flip it with a spatula and cook for a further few minutes until golden.
