Slice a large carrot lengthwise into strips. Heat oil in a skillet, and add the carrot slices. Add salt, a little broth (or water.) Cook until tender, about 12-15 minutes. Flip halfway through.
Drizzle 4 slices of bread with a little oil (from both sides). Heat them up in a pan or on the grill for a few minutes. Top two slices of bread with a heaped tbsp of vegan cheese sauce.
Top with the other slice of bread. Cook on medium heat in a skillet or on the grill for 2-3 minutes, or until golden brown. Flip and cook for a further 2-3 minutes, then remove from pan.
