First, chop the carrot and potato and prepare the other ingredients. Cook the veggies in a pot until softened. This takes about 20 minutes, depending on the size of the chopped veggies.
Add the coconut milk to the carrot soup and stir with a spoon. It will get creamy and lighter. You can use as little or as much as you want, depending on what you prefer.
