This salad combines crispy chickpeas with noodles, rainbow vegetables, pineapple, and a creamy avocado dressing for a healthy, nutrient-dense vegan bowl.

Prepare the noodles. Do this according to package instructions. And then, quickly fry the chickpeas in a little oil with curry powder, salt & pepper until crispy.

STEP 1

Meanwhile, chop the avocado, tomato, and pineapple, shred the cabbage and spiralize the carrot and zucchini.

STEP 2

Blend the dressing ingredients together in a high-speed blender or food processor until smooth and creamy.

STEP 3

Assemble the Buddha bowl ingredients in a wide bowl, and drizzle with the avocado sauce. Feel free to garnish with fresh herbs or some sesame seeds/cumin seeds.
