Baked Gnocchi with  Tomato Sauce

This gnocchi bake combines gnocchi with a creamy tomato sauce and veggies, topped off with dairy-free cheese to feel truly comforting and cozy!

With less than 20 minutes of hands-on prep, this tomato gnocchi bake makes for a great, low-effort weeknight meal  loved by all!

Place broccoli florets in a pot. Add water and salt, bring to a boil and cook for 3-4 minutes. Then drain the water.

STEP 1

Sauté peppers and onions until fragrant. Add vegetable broth, chopped tomatoes, and simmer until the vegetables are soft, and the liquid has reduced.

STEP 2

Blend the vegetable mixture with an immersion blender (or regular blender) until completely smooth.

STEP 3

Next, stir in the dairy-free cream (e.g. soy cream). Then, finally, season to taste with salt and pepper.

STEP 4

Add the gnocchi to a large baking pan (or use 2-3 smaller ones) and mix with the broccoli florets or veggies of choice.

STEP 5

Pour the pureed vegetable sauce over the gnocchi and broccoli and transfer the pan(s) into the oven. Bake for  10 minutes.

STEP 6

Then add vegan cheese, bake in the oven for an additional 15-20 minutes, until bubbling and fully cooked.
