Combine the ground chia seeds and water in a bowl and allow it to sit for 1-2 minutes. Meanwhile, preheat the oven to 360°F/ 180 °C and line a baking sheet
with parchment paper.
Finally, add the vanilla extract and dairy-free chocolate chips (or chopped chocolate chunks) and fold in with a spoon. The dough should be slightly sticky – that’s normal.
These cookies made with coconut sugar are wonderfully moist and soft, though, with a nutty, caramelly flavor through the addition of healthy nut/seed fats.
