This easy, creamy red lentil dahl (masoor dal curry) is frugal, hearty, comforting, flavorful, packed with plant-based protein, and ready in just 30 minutes!

In a large skillet, add the oil over medium heat. Once hot, add the chopped onion and sauté for 3-4 minutes. Then add the ginger, garlic, carrot,  bell pepper & spices & stir.

STEP 1

Next, add the sweetener, lentils, and 3 cups of vegetable broth (or water). Stir and then bring to a boil.

STEP 2

Reduce the heat and allow the lentils to simmer for 10 minutes. Stir in the coconut milk and cook to thicken and reduce to your desired consistency.

STEP 3

Finally, give the red lentil curry a taste and season with salt and black pepper. Adjust the seasonings as needed.
