Doch im Gegensatz zu diesen Rezepten, die auf veganem Ei-Ersatz basieren, ben\u00f6tigen diese koreanischen Pfannkuchen nichts Spezielles (auch kein Tofu oder Kichererbsen)! Meine Version dieses koreanischen Pfannkuchen-Rezepts ist jedoch 100 % vegan, enth\u00e4lt gemischtes Gem\u00fcse und basiert auf einem glutenfreien Pfannkuchenteig!<\/p>\n<h2>Die Zutaten und Alternativen<\/h2>\n<h3>Der koreanische Pfannkuchenteig<\/h3>\n<ul>\n<li><strong>Mehl:<\/strong> Ich habe eine Mischung aus wei\u00dfem Reismehl, Buchweizenmehl (das glutenfrei ist) und Maisst\u00e4rke (oder Kartoffelst\u00e4rke) verwendet. Das Reismehl und die Maisst\u00e4rke sorgen f\u00fcr herrlich knusprige herzhafte Pfannkuchen.<\/li>\n<li><strong>Gew\u00fcrze:<\/strong> Ich habe eine Kombination aus Salz, Kurkumapulver, Cayennepfeffer (f\u00fcr die Sch\u00e4rfe) und Kala Namak (optional &#8211; verleiht aber einen leichten \u201eEier\u201c-Geschmack wie bei einer Eierversion) verwendet.<\/li>\n<li><strong>Wasser:<\/strong> Wird ben\u00f6tigt, um den Pfannkuchenteig zuzubereiten.<\/li>\n<li><strong>\u00d6l:<\/strong> Eine kleine Menge, die dem Teig hinzugef\u00fcgt wird, sorgt f\u00fcr noch knusprigere Pfannkuchen. F\u00fcge bei Bedarf etwas mehr Wasser hinzu.<\/p>\n<ul>\n<li>Anschlie\u00dfend das vorbereitete und klein geschnittene Gem\u00fcse und die Fr\u00fchlingszwiebeln hinzugeben und gut vermischen.<\/li>\n<\/ul>\n<p><em>Alternativ kannst du die Fr\u00fchlingszwiebeln etwas gr\u00f6\u00dfer in 3-5 cm gro\u00dfe St\u00fccke schneiden und das gesamte Gem\u00fcse und den Teig separat bereithalten. Lege einfach das Gem\u00fcse und die Fr\u00fchlingszwiebeln nach Belieben in Form\/Gr\u00f6\u00dfe von kleinen Pfannkuchen in der Pfanne aus (du kannst sie sogar 1-2 Minuten leicht knusprig werden lassen, bevor du den Teig hinzuf\u00fcgst) und gie\u00dfe dann gerade so viel Teig dar\u00fcber, dass das Gem\u00fcse bedeckt ist. Dann ein paar Essl\u00f6ffel des Teigs pro Pfannkuchen in die Pfanne geben.<\/li>\n<li>Die Scallion Pancakes bei geschlossenem Deckel anbraten, bis sie auf der Unterseite goldbraun sind (zur Kontrolle die Seite mit einem Pfannenwender leicht anheben), dann wenden und die andere Seite braten, bis sie ebenfalls goldbraun und durchgebraten sind.<\/li>\n<li>Diesen Vorgang dann mit dem restlichen Teig wiederholen.<\/li>\n<\/ul>\n<p>Sobald alle Pfannkuchen fertig sind, kannst du sie mit etwas zus\u00e4tzlichem Gem\u00fcse-Umami (oder Sojaso\u00dfe) servieren und genie\u00dfen! Zudem kann das K\u00fchlen des Teigs zu noch knusprigeren Gem\u00fcsepfannkuchen f\u00fchren.<\/p>\n<p><strong>Aufbewahrung:<\/strong> \u00dcbrig gebliebene Pfannkuchen mit Gem\u00fcse k\u00f6nnen in einem luftdichten Beh\u00e4lter im K\u00fchlschrank bis zu 3-4 Tage lang aufbewahrt werden.<\/p>\n<p><strong>Einfrieren:<\/strong> Die Pfannkuchen k\u00f6nnen stapelweise eingefroren werden. Lege sie zun\u00e4chst auf ein Backblech (nebeneinander), friere sie ein, bis sie fest sind, und f\u00fclle sie dann in einen Gefrierbeutel\/Beh\u00e4lter. Sie lassen sich bis zu 2 Monate im Gefrierfach aufbewahren.<\/p>\n<p><strong>Aufw\u00e4rmen:<\/strong> Erhitze die koreanischen Pfannkuchen in einer Pfanne mit etwas \u00d6l, damit sie wieder etwas knuspriger werden. Du kannst auch einen kleinen Stapel Pfannkuchen in Folie einwickeln und sie bei 175 \u00b0C im Ofen wieder erw\u00e4rmen. Pr\u00fcfe sie nach 10 Minuten, denn die Zeit h\u00e4ngt von der Gr\u00f6\u00dfe des Stapels ab. F\u00fcr die glutenfreie Variante habe ich Buchweizenmehl anstelle von Weizenmehl verwendet, aber es sollte auch mit normalem Mehl gut funktionieren.<\/p>\n<h3>Kann ich andere Gem\u00fcsesorten verwenden?<\/h3>\n<p>Herzhafte Pfannkuchen sind ziemlich vielseitig, verwende also jegliches Gem\u00fcse, das du gerade da hast und das keine lange Garzeit ben\u00f6tigt. Ich empfehle zerkleinerten Kohl, Pilze, Lauch, sowie andere Paprikasorten, Bohnensprossen usw. Alternativ kannst du die Sch\u00e4rfe durch die Zugabe von roten Chiliflocken oder einfach die Menge des Cayennepfeffers erh\u00f6hen.<\/li>\n<li><strong>Gew\u00fcrze:<\/strong> F\u00fcr einen traditionelleren Geschmack dieser koreanischen Pfannkuchen kannst du dem Pfannkuchenteig ein wenig Knoblauchpulver (und optional Zwiebelpulver) hinzuf\u00fcgen.<\/li>\n<li><strong>Den Teig vorher k\u00fchlen:<\/strong> Wenn du Zeit hast, lass den Teig 30 Minuten im K\u00fchlschrank abk\u00fchlen, bevor du die Scallion Pancakes zubereitest.
