Alles, was du daf\u00fcr brauchst, sind nur ein paar einfache Zutaten und 5 Minuten deiner Zeit, um eine cremige, dicke Kondensmilch zuzubereiten, optional ohne raffinierten Zucker!<\/p>\n<h2>Was ist Kondensmilch (im Gegensatz zu Evaporated Milk)?<\/h2>\n<p>Die beiden Produkte sind eigentlich das Gleiche, au\u00dfer dass evaporated Milk unges\u00fc\u00dfte Kondensmilch ist, w\u00e4hrend Kondensmilch normalerweise immer ges\u00fc\u00dft ist.<\/p>\n<p>Beide Produkte beginnen traditionell mit einer Basis aus Kuhmilch, der 60% des Wassers entzogen wird, um ein konzentrierteres (kondensiertes) Produkt zu erhalten. Zu Hause bedeutet dies in der Regel stundenlanges, sanftes K\u00f6cheln am Herd. Das Ergebnis ist evaporierte Milch, die \u00e4hnlich wie normale Milch aussieht, aber etwas dicker ist und einen cremigen Geschmack hat. Ges\u00fc\u00dfte Kondensmilch ist dann einfach evaporierte Milch, der viel Zucker zugesetzt wurde, was ihr eine dicke, sirupartige Konsistenz verleiht.<\/p>\n<p>Wenn es um die Verwendung geht, wird evaporated Milk normalerweise anstelle von Sahne in Rezepten wie <a href=\"https:\/\/elavegan.com\/de\/veganer-kartoffelbrei\/\"><strong>Kartoffelp\u00fcree<\/strong><\/a> und <a href=\"https:\/\/elavegan.com\/de\/veganes-mac-and-cheese-rezept\/\"><strong>Mac And Cheese<\/strong><\/a> verwendet &#8211; ganz zu schweigen von der Verwendung als Kaffeesahne in Kaffee und Tee oder f\u00fcr <a href=\"https:\/\/elavegan.com\/de\/bananen-milchshake\/\"><strong>Milchshakes<\/strong><\/a>. Des Weiteren spart man sich auch den gesamten Prozess des Erhitzens und Verdampfens. Stattdessen vermischt man einfach Sojamilchpulver mit Wasser, Tahini und einem S\u00fc\u00dfungsmittel f\u00fcr eine &#8222;Instant&#8220; Kondensmilch.<\/p>\n<p>Wenn du noch nicht zu 100% davon \u00fcberzeugt bist, dann solltest du auch wissen, dass du diese &#8222;Dosenmilch&#8220; auch ohne raffinierten Zucker zubereiten kannst, indem du stattdessen eine Zuckeralternative verwendest und dir dadurch HUNDERTE von Kalorien sparst!<\/p>\n<p>Aufgrund des hohen Zuckergehalts habe ich bisher Rezepte mit Kondensmilch gemieden &#8211; stattdessen habe ich vegane Desserts wie diese <a href=\"https:\/\/elavegan.com\/de\/vegane-schokopralinen\/\"><strong>Schokokugeln<\/strong><\/a>, <a href=\"https:\/\/elavegan.com\/de\/vegane-brownies-bohnen\/\"><strong>Brownies mit schwarzen Bohnen<\/strong><\/a> und <a href=\"https:\/\/elavegan.com\/de\/vegane-erdnussbutter-pralinen\/\"><strong>Erdnussbutter Pralinen<\/strong><\/a>\u00a0gemacht. Wahrscheinlich w\u00fcrde Reismilchpulver oder Kokosmilchpulver genauso gut funktionieren &#8211; allerdings muss die Wassermenge eventuell etwas angepasst werden.<\/li>\n<li><strong>Puderzucker:<\/strong> Ich habe eine zuckerfreie Kondensmilch gemacht, indem ich Xylit-Puder verwendet habe. Dazu habe ich Xylit einfach in einer elektrischen Kaffee-\/Gew\u00fcrzm\u00fchle zu einem feinen Pulver gemahlen. Du k\u00f6nntest auch Erythrit-Puder verwenden f\u00fcr eine Low Carb (Keto) Version oder anderen Puderzucker nach Wahl. Um unges\u00fc\u00dfte Kondensmilch herzustellen, l\u00e4sst man den Zucker einfach ganz weg.<\/li>\n<li><strong>Warmes Wasser:<\/strong> Um das Milchpulver zu rehydrieren.<\/li>\n<li><strong>Tahini:<\/strong> Oder Cashewmus &#8211; sorgt f\u00fcr ein cremigeres Ergebnis. Mit einem Schneebesen verr\u00fchren oder in einem Hochleistungsmixer ein paar Sekunden lang mixen.<\/li>\n<li>Das Wasser hinzuf\u00fcgen und gut vermischen. Anschlie\u00dfend das Tahini hinzugeben und ein letztes Mal gut verr\u00fchren &#8211; fertig ist die vegane Kondensmilch!<\/li>\n<\/ul>\n<p>Wenn du eine d\u00fcnnere Konsistenz bevorzugst, kannst du etwas mehr Wasser hinzuf\u00fcgen. Das Ganze hatte ich gut vermischt, in einen Topf gegossen und dann bei niedriger Hitze 45 Minuten lang k\u00f6cheln lassen, bis die Milch zu einer dickeren Konsistenz reduziert war.<\/p>\n<p><em>Ich war allerdings nicht so begeistert davon, wie &#8222;durchsichtig&#8220; die Kondensmilch durch das Xylit war. Mit normalem Puderzucker erzielt man jedoch m\u00f6glicherweise ein &#8222;optisch sch\u00f6neres&#8220; Ergebnis.<\/em><\/p>\n<h2>Wie aufbewahren?<\/h2>\n<p>Da diese Kondensmilch nur wenige Minuten f\u00fcr die Zubereitung in Anspruch nimmt, bereite ich sie gerne nach Bedarf f\u00fcr Rezepte zu. Aus diesem Grund musst du vielleicht ein wenig zus\u00e4tzliches Wasser hinzuf\u00fcgen.<\/li>\n<li><strong>Der Zucker, den du f\u00fcr dieses Rezept verwendest, ist frei w\u00e4hlbar<\/strong>, solange es sich um Kristallzucker handelt. Du kannst ihn, wenn er nicht pulverf\u00f6rmig ist, zusammen mit dem Sojamilchpulver in einen Mixer geben und fein mixen.
