Deshalb habe ich vor Kurzem mein Rezept f\u00fcr <a href=\"https:\/\/elavegan.com\/de\/dumpling-wan-tan-gyoza-teig\/\"><strong>selbstgemachten Dumpling Teig<\/strong><\/a> ver\u00f6ffentlicht, und jetzt ist es an der Zeit daraus leckere Gyoza zu machen!<\/p>\n<h2>Geschmackvolle Teigtaschen mit Gem\u00fcse<\/h2>\n<p>Zum Gl\u00fcck sind die Dumpling Teigbl\u00e4tter von Natur aus pflanzlich und somit perfekt f\u00fcr die Herstellung von veganen oder vegetarischen Gyoza. Selbstgemachte Teigbl\u00e4tter k\u00f6nnen sowohl mit Weizenmehl, als auch mit glutenfreiem Mehl zubereitet werden. In meinem Rezept findest du beide Varianten.<\/p>\n<p>Obwohl die Zubereitung von selbstgemachten Teigtaschen eine Weile dauern kann, finde ich den Vorgang ziemlich entspannend. Vielleicht kannst du ja auch andere Familienmitglieder dazu bringen, dir zu helfen. Ich bereite meist eine gro\u00dfe Menge dieser Dumplings zu und bewahre sie im <strong>Gefrierschrank<\/strong> auf &#8211; so kann ich sie im Handumdrehen zubereiten.<\/p>\n<p>Dieses Rezept ist auch <strong>super vielseitig<\/strong>. Ich habe eine F\u00fcllung aus einigen meiner liebsten Gem\u00fcsesorten kreiert. Es gibt jedoch zahlreiche M\u00f6glichkeiten, dieses Rezept an den pers\u00f6nlichen Geschmack anzupassen (und an das, was du zur Verf\u00fcgung hast).<\/p>\n<p>Und das Beste ist, dass diese Gyoza, obwohl sie vollgepackt mit gesundem Gem\u00fcse sind, trotzdem sehr lecker schmecken. (Potstickers vs. Gyoza)<\/h2>\n<p>Es gibt unz\u00e4hlige verschiedene Varianten von asiatischen Dumplings (Jiaozi); einige werden gekocht, einige ged\u00e4mpft, einige gebraten. Auch die Art der &#8222;H\u00fclle&#8220; kann sich \u00e4ndern, angefangen bei einer H\u00fclle aus Klebreis bis hin zu einer H\u00fclle auf Ei-Basis oder einer &#8222;Universalh\u00fclle&#8220; basierend auf Mehl und Wasser.<\/p>\n<p>F\u00fcr dieses Teigtaschen-Rezept habe ich eine Art asiatische Dumplings gemacht, die irgendwo zwischen <strong>chinesischen Potstickers und japanischen Gyoza<\/strong> liegen. Falls du dich fragst, was der Unterschied zwischen Gyoza und Potstickers ist. Nun, nicht viel;<\/p>\n<ul>\n<li>Beide werden aus der gleichen H\u00fclle hergestellt &#8211; allerdings sind Gyoza meist leicht d\u00fcnner.<\/li>\n<li>Die F\u00fcllungen der Teigtaschen enthalten \u00e4hnliche Zutaten, obwohl Gem\u00fcse-Gyoza tendenziell eine etwas feinere Textur haben.<\/li>\n<li>Au\u00dferdem werden sowohl Potstickers als auch Gyoza nach der &#8222;Brat-Dampf-Brat&#8220;-Methode zubereitet, die eine weiche, zarte Au\u00dfenseite und einen knusprigen Boden ergibt. Tats\u00e4chlich wurden alle Dumplings, die du auf den Fotos hier siehst, komplett glutenfrei hergestellt! Du kannst aber auch gekaufte Teigbl\u00e4tter verwenden.<\/li>\n<li><strong>Gem\u00fcse:<\/strong> Ich habe eine Kombination aus geraspeltem Kohl, Karotten, Zucchini und roter Paprika benutzt. Anschlie\u00dfend die fein geraspelte rote Paprika, Zucchini, Karotte und den Kohl hinzuf\u00fcgen.<\/li>\n<li>Umr\u00fchren und dann alle Gew\u00fcrze, Tamari und Erdnussbutter (optional) hinzugeben. 5-6 Minuten lang unter h\u00e4ufigem R\u00fchren weitergaren. Anschlie\u00dfend mit einem in Wasser getauchten Finger an den R\u00e4ndern des Wrappers entlangfahren.<\/li>\n<li>Die Teigtaschen gem\u00e4\u00df den nachfolgenden <strong>Schritt-f\u00fcr-Schritt-Fotos<\/strong> falten und vorbereitete Teigtaschen mit Frischhaltefolie oder einem feuchten Handtuch abdecken, w\u00e4hrend du den Vorgang mit den restlichen Zutaten wiederholst.<\/li>\n<\/ul>\n<p>Es gibt unz\u00e4hlige M\u00f6glichkeiten, wie du selbstgemachte Dumplings falten kannst. Die Methode, die ich verwendet habe, ist nur eine von vielen &#8211; die sogenannte <strong>one-directional pleat<\/strong>. Au\u00dferdem sind diese Dumplings vegan (ohne Milch, ohne Eier), fleischfrei und glutenfrei! #dumplings #gyoza #teigtaschen #elasrecipes | elavegan.com\/de\" \/><\/p>\n<h4><strong>Schritt 4: Dumplings d\u00e4mpfen<\/strong><\/h4>\n<ul>\n<li>In einer gro\u00dfen Pfanne 1 EL \u00d6l bei mittlerer Hitze erhitzen und ca. 10-15 Dumplings (je nach Gr\u00f6\u00dfe) in die Pfanne geben und 2 Minuten lang anbraten.<\/li>\n<li>Anschlie\u00dfend ca. 120 ml Wasser in die Pfanne gie\u00dfen, mit einem Deckel abdecken und die Hitze auf mittlere bis niedrige Stufe reduzieren.<\/li>\n<li>Die Teigtaschen d\u00e4mpfen, bis das Wasser fast vollst\u00e4ndig verdampft ist (ca. 8-10 Minuten), den Deckel abnehmen, die Hitze auf mittlere bis hohe Stufe erh\u00f6hen und weitere 1-2 Minuten braten, um die Unterseite knusprig werden zu lassen.<\/li>\n<\/ul>\n<p>Es gibt mehrere Saucen-Optionen, die du zu diesen Gyoza servieren kannst. Ich verwende gerne diese <a href=\"https:\/\/elavegan.com\/de\/chinesische-szechuan-sauce\/\"><strong>chinesische Szechuan Sauce<\/strong><\/a> oder diese <a href=\"https:\/\/elavegan.com\/de\/hoisin-sauce-rezept\/\"><strong>Hoisin Sauce<\/strong><\/a>. Wenn du jedoch Reste \u00fcbrig hast, kannst du sie in einem luftdichten Beh\u00e4lter (damit sie nicht austrocknen) bis zu 3 Tage im K\u00fchlschrank aufbewahren.<\/p>\n<h3>Kann man die Dumplings im Voraus zubereiten?<\/h3>\n<p>Ja, du kannst die Teigtaschen vorbereiten und einfrieren. Lege sie dazu mit etwas Abstand zueinander auf ein Backblech oder Holzbrett und friere sie etwa eine Stunde lang ein, bis sie fest sind. Dann in einen luftdichten Beh\u00e4lter bzw. Gefrierbeutel umf\u00fcllen und bis zu <strong>1 Monat einfrieren<\/strong>.<\/p>\n<p>\u00dcber Nacht im K\u00fchlschrank auftauen lassen oder direkt aus dem Gefrierfach heraus d\u00e4mpfen.<\/p>\n<p>Die vorbereiteten (nicht ged\u00e4mpften) Dumplings k\u00f6nnen auch, fest eingewickelt, bis zu 1-2 Tage im <strong>K\u00fchlschrank<\/strong> aufbewahrt werden.<\/p>\n<h3>Wie d\u00e4mpft man gefrorene Gyoza?<\/h3>\n<p>Befolge die gleichen Anweisungen wie im Rezept beschrieben, aber f\u00fcge etwas mehr Wasser hinzu und d\u00e4mpfe sie 2-3 Minuten l\u00e4nger.<\/p>\n<h3>Was ist, wenn meine (glutenfreien) Teigtaschen beim Falten Risse bekommen?<\/h3>\n<p>Glutenfreier Teig kann etwas br\u00fcchiger sein, das ist v\u00f6llig normal. Winzige Risse neigen dazu, sich selbst zu schlie\u00dfen, wenn die Teigtaschen ged\u00e4mpft werden. Wenn sie jedoch gr\u00f6\u00dfere Risse bekommen, kannst du sie mit ein wenig zus\u00e4tzlichem Teig ausbessern. Du m\u00f6chtest nicht meine allerersten selbstgemachten Teigtaschen sehen, haha. <strong>\u00dcbung macht bekanntlich den Meister!<\/strong><\/li>\n<li>Vergiss nicht <strong>Wasser entlang der Teigkreise<\/strong> zu verwenden, da jene mit St\u00e4rke bedeckt sind, sodass sie sich sonst nicht leicht versiegeln lassen.<\/li>\n<li>Die F\u00fcllung von veganen oder vegetarischen Teigtaschen ist meist lockerer sein, und es bedarf etwas <strong>Geduld beim Falten<\/strong>.
