Jetzt, wo die Feiertage vor der T\u00fcr stehen, ist es genau die richtige Zeit, alles mit Zimt zu genie\u00dfen. Traditionelle amerikanische Snickerdoodle Cookies bestehen aus Butter, \u00d6l, Zucker und Mehl (und oft auch Ei). Sie \u00e4hneln &#8222;Sugar Cookies&#8220;, aber mit dem Bonus von Zimt und einer leichteren, weicheren Textur und einem leicht s\u00e4uerlichen Geschmack dank des im Rezept enthaltenen Weinsteinbackpulvers (Cream of Tartar).<\/p>\n<p>Im Gegensatz zu Zuckerpl\u00e4tzchen sind Snickerdoodles leicht knusprig (au\u00dfen) und etwas &#8222;chewy&#8220;, mit einer knittrigen &#8222;rissigen&#8220; Au\u00dfenseite. Der Hauptunterschied zwischen den beiden ist die Verwendung von Weinsteinbackpulver, das mit den Fl\u00fcssigkeiten im Keksteig reagiert und dem Keks beim Aufgehen hilft und ihm den typischen leicht s\u00e4uerlichen Geschmack verleiht.<\/p>\n<p>Mein Snickerdoodle Rezept ist nicht nur glutenfrei, und vegan (eifrei, ohne Milch), sondern die Kekse sind trotzdem perfekt s\u00fc\u00df, leicht und fluffig, mit einer angenehmen Zimt-Note. Empfehlenswert ist es den Teig bereits zu Teigkugeln zu rollen und in der Zimt-Zucker-Mischung zu w\u00e4lzen. Die Kugeln kann man dann aus dem Gefrierfach nehmen und direkt backen, wodurch die Backzeit sich um einige Minuten verl\u00e4ngern wird.<\/p>\n<h4><strong>F\u00fcr die Aufbewahrung:<\/strong><\/h4>\n<p>Lagere die gebackenen Snickerdoodle Cookies in einem luftdichten Beh\u00e4lter bei Raumtemperatur zwischen 5 und 6 Tagen oder im K\u00fchlschrank bis zu 10 Tagen.<\/p>\n<p>Die gebackenen Zimtpl\u00e4tzchen sind ebenfalls bis zu 2 Monate tiefk\u00fchlf\u00e4hig. Falls du dich jedoch nicht glutenfrei ern\u00e4hrst, kannst du 120 Gramm normales Weizenmehl verwenden. M\u00f6glicherweise muss die Mehlmenge etwas angepasst werden. Wenn der Teig zu weich ist, f\u00fcge einfach mehr Mehl hinzu, und wenn er zu trocken ist, etwas mehr vegane Margarine.<\/li>\n<li><strong>Weinsteinbackpulver:<\/strong> Falls nicht vorhanden kannst du das Weinsteinbackpulver und das Natron durch 1 1\/4 Teel\u00f6ffel Backpulver ersetzen. Du k\u00f6nntest auch Essig an Stelle vom Weinsteinbackpulver verwenden, um etwas S\u00e4ure hinzuzuf\u00fcgen, obwohl sich die Textur unterscheiden wird.<\/li>\n<li><strong>Leinsamen-Ei:<\/strong> Du k\u00f6nntest versuchen, das Leinsamen-Ei durch einen anderen Ei-Ersatz zu ersetzen, wie z.B. Chia, Apfelmus, K\u00fcrbis oder Aquafaba.
