Was ich derzeit am liebsten esse? Vegane Kartoffelpuffer!<\/p>\n<h2>Was sind Kartoffelpuffer?<\/h2>\n<p>Kartoffelpuffer sind auf der ganzen Welt beliebt. In Amerika hei\u00dfen sie hash browns, in der Schweiz R\u00f6sti, in Polen Latkes und bei uns werden sie oft auch als Reibekuchen bezeichnet. Sie werden aus geriebenen Kartoffeln (hin und wieder aus einer Mischung aus gekochten und rohen Kartoffeln, manchmal mit Zus\u00e4tzen wie Ei, K\u00e4se und Speck) zubereitet, zu Patties geformt und dann goldbraun gebraten.<\/p>\n<p>Bei diesem Kartoffelpuffer-Rezept werden die Kartoffeln nicht vorgekocht und die Herstellung ist total einfach. Auch eine Schalotte w\u00e4re ok.<\/li>\n<li><strong>Frische Petersilie: <\/strong>(optional) Es geht auch Schnittlauch oder Dill.<\/li>\n<li><strong>Mehl:<\/strong> F\u00fcr glutenfreie Kartoffelpuffer benutze ich ein wenig Reismehl oder Kichererbsenmehl. Anschlie\u00dfend die Zwiebel reiben oder fein w\u00fcrfeln.<\/li>\n<li>Die geraspelten Kartoffeln in einen Nussmilchbeutel (oder mehrere Lagen Mulltuch\/ein sauberes K\u00fcchentuch) geben und auspressen, um so viel \u00fcbersch\u00fcssige Fl\u00fcssigkeit wie m\u00f6glich zu entfernen.<\/li>\n<\/ul>\n<p>Diese Fl\u00fcssigkeit noch nicht wegsch\u00fctten, sondern beiseite stellen.<\/p>\n<ul>\n<li>Nun die Kartoffeln in eine gro\u00dfe Sch\u00fcssel geben und mit den restlichen Zutaten mit den H\u00e4nden vermengen.<\/li>\n<li>Die ausgepresste Kartoffelfl\u00fcssigkeit vorsichtig abgie\u00dfen und die restliche St\u00e4rke am Boden der Sch\u00fcssel zu der R\u00f6sti-Mischung geben und gut vermischen.<\/li>\n<li>In der Zwischenzeit eine gro\u00dfe Pfanne mit 1-2 Essl\u00f6ffeln \u00d6l bei niedriger bis mittlerer Hitze vorheizen (die Menge reicht f\u00fcr 4-5 Kartoffelpuffer).<\/li>\n<li>Sobald das \u00d6l hei\u00df ist, die R\u00f6sti von beiden Seiten goldbraun und knusprig braten (dies kann ca. 6-8 Minuten pro Seite dauern). Nicht zu hei\u00df anbraten, da die Patties sonst schnell au\u00dfen schwarz werden und innen roh bleiben. Diese selbstgemachten Kartoffelpuffer werden jedoch haupts\u00e4chlich aus Kartoffeln (und Zwiebeln) hergestellt, mit wenig \u00d6l gebraten und sind in Ma\u00dfen als Teil einer ausgewogenen Ern\u00e4hrung durchaus gesund.
