Es ist Teil der Schw\u00e4bischen Alb, was bedeutet, dass er mit diesem k\u00f6stlichen Gericht sehr vertraut ist. Sie werden aus Kartoffeln, Kichererbsenmehl und Tapiokamehl hergestellt. Manchmal f\u00fcge ich auch etwas pulverisierte Gem\u00fcsebr\u00fche (Bouillonpulver) hinzu, die einen wunderbaren Geschmack verleiht.<\/p>\n<p>Wie du siehst, ben\u00f6tigt man <strong>nur ein paar einfache Zutaten<\/strong>, um diese k\u00f6stlichen gebratenen Schupfnudeln einfach vegan herzustellen.<\/p>\n<p>Ein klassisches Schupfnudel-Rezept enth\u00e4lt Kartoffeln, normales Weizenmehl und Eigelb. Das Rezept ist \u00fcberhaupt nicht kompliziert. Alles, was du tun musst, ist die Kartoffeln zu kochen, zu zerstampfen und alle Zutaten dann in einer gro\u00dfen Sch\u00fcssel zu vermischen. Den Teig in lange Str\u00e4nge rollen und danach zu kleinen, sich an beiden Enden verj\u00fcngenden R\u00f6llchen formen. In einer Pfanne anbraten und fertig. Es ist wirklich super einfach!<\/p>\n<p><strong>FOTO 1:<\/strong> Auf dem ersten Bild stampfe ich die gekochten Kartoffeln mit einem Kartoffelstampfer.<\/p>\n<p><strong>FOTO 2:<\/strong> Als N\u00e4chstes habe ich das Kartoffelp\u00fcree mit der Mehlmischung kombiniert. Mit den H\u00e4nden kneten, bis der Teig zusammenh\u00e4lt.<\/p>\n<p><strong>FOTO 3:<\/strong> Hier sieht man wie der Teig aussieht, nachdem er einige Minuten geknetet wurde. Es muss nicht perfekt sein, versuche einfach eine \u00e4hnliche Gr\u00f6\u00dfe beizubehalten.<\/p>\n<p><strong>FOTO 7:<\/strong> \u00d6l in einer Pfanne erhitzen und die geformten Teiglinge reingeben. Von einer Seite anbraten, bis alles sch\u00f6n gebr\u00e4unt ist. Es ist jedoch auch m\u00f6glich, die Fingernudeln zuerst in kochendem Wasser zu garen, bis sie oben schwimmen. Dann mit einem Schauml\u00f6ffel (Siebl\u00f6ffel) aus dem Wasser nehmen und in einer Pfanne mit \u00d6l oder veganer Butter (wie Gnocchi) anbraten. Beide Optionen funktionieren, aber <strong>die erste Methode ist bequemer<\/strong>!<\/p>\n<p>Diese besonderen deutschen Kartoffelnudeln sind eine wunderbare Alternative zu Reis, normalen Kartoffeln oder herk\u00f6mmlichen Nudeln. Wenn du festkochende Kartoffeln verwendest, dann wird der Teig ein wenig klebrig werden.<\/p>\n<h3>Kann man sie einfrieren?<\/h3>\n<p>Absolut! Ich mache oft eine gr\u00f6\u00dfere Charge und friere die H\u00e4lfte der Buabaspitzle f\u00fcr den sp\u00e4teren Gebrauch ein. Du kannst sie auf einem kleineren Backblech einfrieren. Sobald sie vollst\u00e4ndig gefroren sind, k\u00f6nnen die Nudeln in einen Beh\u00e4lter oder Gefrierbeutel umgef\u00fcllt werden. Wenn der Teig jedoch viel zu klebrig ist, dann mehr Kichererbsenmehl hinzugeben und erneut kneten. Den Teig mit einem Messer in 3-4 cm gro\u00dfe St\u00fccke schneiden und mit den H\u00e4nden zu fingerf\u00f6rmigen Teiglingen formen. Von einer Seite anbraten, bis alles sch\u00f6n gebr\u00e4unt ist. Dann umdrehen und von der anderen Seite braten.<\/div><\/li><li id=\"wprm-recipe-5630-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Ca. 120 ml Wasser in die Pfanne gie\u00dfen und einen Deckel auf die Pfanne geben, um die Schupfnudeln zu d\u00e4mpfen, bis das Wasser verdunstet ist.<\/div><\/li><li id=\"wprm-recipe-5630-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Diese Methode ist die einfachste. Es ist jedoch auch m\u00f6glich, die Fingernudeln zuerst in kochendem Salzwasser zu kochen, bis sie oben schwimmen. Dann mit einem Siebl\u00f6ffel aus dem Wasser nehmen und in einer Pfanne mit \u00d6l oder veganer Butter (wie Gnocchi) anbraten.
