Meine Eltern kommen aus der Tschechischen Republik (was nicht weit von Ungarn entfernt ist) und haben in der Vergangenheit oft Gulasch gemacht. Weil ich dieses Gericht als Kind so lecker fand, habe ich beschlossen, meine eigene vegane Version zu kreieren.<\/p>\n<p>Und hier ist sie! Ein vegetarisches Gulasch, das sehr lecker und deftig ist. Was in allen anderen L\u00e4ndern \u201eGulasch\u201c, \u201eGulyas\u201c oder \u201egoulash\u201c hei\u00dft, ist jedoch in Ungarn das P\u00f6rk\u00f6lt bzw. Paprik\u00e1s (beim Tok\u00e1ny wird das Fleisch in l\u00e4ngliche Streifen geschnitten). Nur in Ungarn ist ein guly\u00e1s eine Suppe (ungarisch: guly\u00e1sleves; deutsch: Gulaschsuppe).<\/p>\n<p>Es werden grobe W\u00fcrfel aus Fleisch mit fester Struktur (Hesse, Bug, Hals) vorzugsweise vom Rind, Kalb oder Schwein verwendet, mit Zwiebeln und Gew\u00fcrzpaprika zubereitet und typischerweise mit K\u00fcmmel, Zitronenschale und etwas Knoblauch gew\u00fcrzt.<\/p><\/blockquote>\n<p>Nat\u00fcrlich habe ich kein Rindfleisch oder anderes Fleisch verwendet. Du ben\u00f6tigst nur einen Topf, einen Herd und leicht zug\u00e4ngliche Zutaten.<\/p>\n<ul>\n<li>Sojaschnetzel f\u00fcr etwa 10 Minuten in Wasser einweichen (eine sojafreie Version findest du unten im Rezept). Anschlie\u00dfend das Wasser abtropfen lassen\/auswringen.<\/li>\n<li>In der Zwischenzeit Gem\u00fcse + Kartoffeln klein schneiden und einen gro\u00dfen Topf auf dem Herd bei mittlerer Hitze erhitzen.<\/li>\n<li>1 EL Wasser (oder \u00d6l) dazugeben und die Zwiebeln mit den Paprikaschoten ca. 3-4 Minuten anbraten.<\/li>\n<li>Karotte, Knoblauch, Kartoffeln, Tomaten, alle Gew\u00fcrze, Tomatensauce, Lorbeerbl\u00e4tter und Wasser (oder Gem\u00fcsebr\u00fche) hinzugeben und die Mischung zum Kochen bringen.<\/li>\n<li>Etwa 15 Minuten k\u00f6cheln lassen, dann die Sojaschnetzel, die Sojasauce und den Balsamico-Essig hinzuf\u00fcgen.<\/li>\n<li>Weitere 20 Minuten k\u00f6cheln lassen oder bis die Kartoffeln und das Gem\u00fcse weich sind.<\/li>\n<li>Zum Schluss Kokosmilch (oder deine Lieblingscreme auf pflanzlicher Basis, z. B. Hafercreme) hinzuf\u00fcgen und umr\u00fchren.<\/li>\n<li>Abschmecken und ggf. nachw\u00fcrzen. Sie enthalten <strong>Antioxidantien<\/strong>, <strong>Vitamine<\/strong> und <strong>Mineralien<\/strong>. Ich habe einen <a href=\"https:\/\/www.lifeline.de\/ernaehrung-fitness\/gesund-essen\/paprika-id120305.html\" target=\"_blank\" rel=\"noopener\">tollen Artikel<\/a> gefunden, in dem interessante Fakten \u00fcber Paprikas stehen:<\/p>\n<p><strong>1.) Paprika lindert Verdauungsst\u00f6rungen<\/strong><\/p>\n<p>Bei Darmproblemen wie Durchfall und Bl\u00e4hungen hat sich der Verzehr von Paprika bew\u00e4hrt. Hinzu kommt, dass sie die Verdauung f\u00f6rdert. Denn ihr Ballaststoffgehalt kann sich sehen lassen: Eine Schote enth\u00e4lt bereits ein Drittel der empfohlenen Ballaststoffmenge.<\/p>\n<p><strong>2.) Nat\u00fcrliches Schmerzmittel Capsaicin<\/strong><\/p>\n<p>Au\u00dferdem enth\u00e4lt die Paprikaschote Capsaicin, eine Substanz, die unter\u2005anderem den Blutkreislauf anregt. Auf die Haut aufgetragen, hemmt dieser Inhaltsstoff die Schmerzweiterleitung der Nerven. Gem\u00fcsepaprika enth\u00e4lt nur wenig Capsaicin. Besonders viel davon hingegen steckt in der scharfen Gew\u00fcrzpaprika, auch bekannt als Chili.<\/p>\n<p><strong>3.) Vitamin C<\/strong><\/p>\n<p>Eine mittelgro\u00dfe Paprika deckt bereits den Tagesbedarf an Vitamin C. Der Stoff wirkt nicht blo\u00df vorbeugend gegen Erk\u00e4ltungen und andere Infekte, sondern n\u00e4hrt auch die Augen: Netzhaut und Nervenzellen brauchen diesen Kraftstoff.<\/p>\n<p><strong>4.) Gut f\u00fcr die Augen<\/strong><\/p>\n<p>Neben weiteren &#8222;Augenvitaminen&#8220; versorgt uns Paprika mit den Carotinoiden Lutein und Zeaxanthin. Alle gemeinsam sch\u00fctzen die Augen vor UV-Strahlen, beugen Nachtblindheit vor und wehren Studien zufolge Krankheiten wie Grauen Star und altersbedingte Makuladegeneration ab.<\/p>\n<p><strong>5.) F\u00fcr Knochen und Gelenke<\/strong><\/p>\n<p>Weitere gesunde Stoffe in den bunten Schoten: reichlich Vitamin E, Kalium, Magnesium und Eisen. Die genauen Zutaten und Angaben zu Gewicht findest du unten im Rezept!<\/p>\n<p>Wenn du das Rezept <strong>sojafrei<\/strong> machen m\u00f6chtest, dann lasse einfach die Sojaschnetzel weg und verwende stattdessen beispielsweise 500 Gramm gekochte Bohnen oder Linsen (f\u00fcge diese 5 Minuten vor Ablauf der Kochzeit hinzu).<\/p>\n<p>Sojaschnetzel verleihen dem Gericht viel pflanzliches Protein. Ich denke, das ist in der Tschechischen Republik und in der Slowakei am meisten verbreitet. Amerikaner essen Gulasch gerne mit <strong>Nudeln<\/strong>, zum Beispiel H\u00f6rnchen-Nudeln oder Makkaroni, was auf jeden Fall auch sehr lecker ist!<\/p>\n<p>Ich esse dieses herzhafte Ragout jedoch am liebsten mit <a href=\"https:\/\/elavegan.com\/de\/veganer-kartoffelbrei\/\"><strong>Kartoffelp\u00fcree<\/strong><\/a>.
