Sie lassen sich schnell und einfach zubereiten und sind einfach perfekt zum Fr\u00fchst\u00fcck oder als Dessert. Da ich es liebe, gesunde Zutaten in meinen Rezepten zu benutzen, habe ich diese mehlfreien Muffins mit S\u00fc\u00dfkartoffeln hergestellt! S\u00fc\u00dfkartoffel ist ein gesundes Wurzelgem\u00fcse, welches sehr n\u00e4hrstoffreich ist. S\u00fc\u00dfkartoffeln enthalten viel Beta-Carotin, Vitamin C, Kalium und Ballaststoffe. Ich habe zuckerfreien Birkenzucker (Xylit) als S\u00fc\u00dfungsmittel verwendet, aber du kannst Kokoszucker, Dattelzucker, braunen Zucker, normalen Zucker oder sogar Erythrit verwenden, was keine Kalorien enth\u00e4lt. Du kannst die Schokoladenchips hinzuf\u00fcgen oder aber auch weglassen. Du kannst auch mehrere S\u00fc\u00dfkartoffeln kochen (z. B. f\u00fcr ein anderes Gericht), aber f\u00fcr dieses Rezept ben\u00f6tigst du nur eine Tasse S\u00fc\u00dfkartoffelp\u00fcree (235 Gramm). Zerdr\u00fccke die S\u00fc\u00dfkartoffel mit einem Kartoffelstampfer und heize den Ofen an. In einer Sch\u00fcssel oder einem Hexler die trockenen Zutaten mischen\/mixen. Die feuchten Zutaten hinzugeben und alles vermischen. Zum Schluss die Schokoladenchips dazugeben und die veganen S\u00fc\u00dfkartoffel Muffins etwa 25 Minuten im Ofen backen. Das wars schon! Ich w\u00fcrde Kokosmehl auf keinen Fall empfehlen, weil es sehr saugf\u00e4hig ist und das Dessert austrocknet! Das Ergebnis mit Buchweizenmehl, Hirsemehl oder Quinoamehl sollte \u00e4hnlich sein wie die Version mit Haferflocken. Da ich jedoch keine dieser getreidefreien Versionen ausprobiert habe, kann ich nicht versprechen, dass sie genauso gut werden wie die Version mit Haferflocken! Mandelmehl (gemahlene Mandeln) verleiht den Muffins aufgrund des hohen Fettanteils noch mehr Feuchtigkeit, dadurch ben\u00f6tigt man wahrscheinlich weniger pflanzliche Milch.
