Es kommt oft vor, dass glutenfreie Br\u00f6tchen (ohne Eier) wie Backsteine aus dem Ofen kommen und\/oder ziemlich schlecht schmecken! Wenn du dich sowohl vegan, als auch glutenfrei ern\u00e4hrst, wirst du wissen, wor\u00fcber ich spreche. Die meisten weichen glutenfreien Hefebr\u00f6tchen enthalten Eier, was bedeutet, dass sie nicht vegan sind. Die meisten weichen veganen Hefebr\u00f6tchen enthalten Weizenmehl, was bedeutet, dass sie Gluten enthalten! Es ist somit kein leichtes Unterfangen, <strong>weiche vegane glutenfreie Br\u00f6tchen<\/strong> herzustellen. Ich wei\u00df nicht, ob es ein Geheimnis ist, aber ich erinnerte mich daran, dass ich diesen Trick vor etwa 10 Jahren zum ersten Mal ausprobiert habe. Und zwar hatte ich damals eine Pizza gemacht und habe in den Teig zus\u00e4tzlich etwas <strong>Kartoffelp\u00fcree<\/strong> reingemacht! Der Pizzateig war einerseits soft aber gleichzeitig auch knusprig. Das Ergebnis war wirklich richtig gut! Nach unz\u00e4hligen gescheiterten Versuchen, weiche glutenfreie Br\u00f6tchen herzustellen, die auch vegan sind, erinnerte ich mich pl\u00f6tzlich an diesen Kartoffelbrei-Trick. Und es scheint, dass dies das fehlende Puzzleteil war, denn die Br\u00f6tchen sind sch\u00f6n weich geworden!<\/p>\n<h3><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-4965 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2019\/03\/soft-vegan-gluten-free-buns-in-a-burger-silicone-pan-before-baking.jpg\" alt=\"weiche glutenfreie br\u00f6tchen vegan eifrei \u00f6lfrei\" width=\"1080\" height=\"1453\" data-pin-description=\"Weiche glutenfreie Br\u00f6tchen, die vegan (eifrei, milchfrei), \u00f6lfrei sind und zudem kein Xanthan enthalten! Dieses Rezept ist einfach zuzubereiten und perfekt f\u00fcr einen Burger oder ein Sandwich! #vegan #glutenfrei #br\u00f6tchen #\u00f6lfrei | elavegan.com\/de\" \/>Flohsamenschalenpulver<\/h3>\n<p>Glutenfreie Rezepte enthalten oft Xanthan, einen nicht sehr gesunden &#8222;Gummi&#8220;. Es l\u00e4sst den Teig etwas mehr aufgehen, allerdings habe ich gelesen, dass viele Menschen Allergien gegen Xanthan haben und versuchen diese Zutat zu meiden. Daher verwende ich kein Xanthan in meinen Rezepten und benutze stattdessen <strong>Flohsamenschalenpulver<\/strong>. Es ist nicht nur eine tolle Zutat f\u00fcr glutenfreie Teige, sondern ist auch sehr vorteilhaft f\u00fcr unsere Darmgesundheit! Flohsamenschalenpulver sorgt f\u00fcr <strong>Elastizit\u00e4t und Struktur<\/strong> in glutenfreien Teigen. Es ist im Grunde eine Ballaststoff, der sehr viel Fl\u00fcssigkeit bindet und sollte aus diesem Grund auch nicht weggelassen werden, da der Teig ansonsten ganz anders rauskommt!<\/p>\n<h3><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-4966 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2019\/03\/soft-vegan-gluten-free-buns-recipe-1.jpg\" alt=\"weiche glutenfreie br\u00f6tchen vegan eifrei \u00f6lfrei\" width=\"1080\" height=\"1335\" data-pin-description=\"Weiche glutenfreie Br\u00f6tchen, die vegan (eifrei, milchfrei), \u00f6lfrei sind und zudem kein Xanthan enthalten! Deshalb mache ich meine eigene glutenfreie Mischung, indem ich einfach Reismehl mit Tapiokamehl, manchmal Maisst\u00e4rke und manchmal Hafermehl (gemahlene Haferflocken) mische. Ich verwende auch h\u00e4ufig Kichererbsenmehl, das auch der Hauptbestandteil meiner <a href=\"https:\/\/elavegan.com\/de\/tortillas-rezept-glutenfrei\/\" target=\"_blank\" rel=\"noopener\"><strong>selbstgemachten glutenfreien Tortillas<\/strong><\/a> und <a href=\"https:\/\/elavegan.com\/de\/glutenfreie-gnocchi-selbstgemacht\/\" target=\"_blank\" rel=\"noopener\"><strong>glutenfreien Gnocchi<\/strong><\/a> ist. Als ich jedoch Kichererbsenmehl bei diesen glutenfreien Br\u00f6tchen verwendet habe, war das Ergebnis nicht sehr vielversprechend. Die Hefebr\u00f6tchen fielen eher trocken und spr\u00f6de aus. Ich hatte das beste Ergebnis mit einer Mischung aus Hafermehl, Reismehl und Tapiokamehl.<\/p>\n<p>Ich denke, Buchweizenmehl (und vielleicht auch Hirsemehl) w\u00e4re ein weiterer guter Ersatz f\u00fcr Hafermehl, allerdings habe ich es noch nicht ausprobiert. Du k\u00f6nntest versuchen eine gekaufte Mischung zu verwenden, aber das Ergebnis wird sich wahrscheinlich von meinem Ergebnis unterscheiden, da glutenfreie Mehlmischungen oft unterschiedliche glutenfreie Mehle enthalten.
