Und es gibt wahrscheinlich nichts Festlicheres als einen leckeren, saftigen und weichen Cranberry Kuchen, frisch aus dem Ofen. Die Glasur habe ich mit Erythrit (auch als Xucker light bekannt) hergestellt. Solch&#8216; eine Glasur ist nat\u00fcrlich ges\u00fcnder und kalorien\u00e4rmer als eine Glasur mit raffiniertem Zucker. Du kannst auch Chia-Eier (gemahlene Chiasamen vermischt mit Wasser) benutzen.<\/p>\n<p>Des Weiteren habe ich <strong>Kokosmilch<\/strong> (aus der Dose) verwendet. Kokosmilch enth\u00e4lt mehr Fett als z.B. Hafermilch, Reismilch oder Mandelmilch usw., die meistens fast nur aus Wasser bestehen. Du k\u00f6nntest alternativ auch Hafersahne oder Sojasahne benutzen. Wenn du pflanzliche Milch bevorzugst, w\u00fcrde ich allerdings empfehlen zu dem Teig noch ein paar Essl\u00f6ffel \u00d6l dazuzugeben. Du kannst ihn <strong>bis zu 5 Tage<\/strong> lang im K\u00fchlschrank aufbewahren. Er bleibt saftig und lecker. Verteile die Glasur auf dem Kuchen, sobald dieser abgek\u00fchlt ist. Stelle den Kuchen in den K\u00fchlschrank bis die Glasur fest ist.
