Nun, ich liebe Linsen. Sie sind eine <a href=\"https:\/\/www.healthline.com\/nutrition\/lentils\" target=\"_blank\" rel=\"noopener\"><strong>fantastische Proteinquelle<\/strong><\/a> und enthalten au\u00dferdem viele Vitamine, Mineralien und Ballaststoffe. Linsen sind zum Beispiel reich an Fols\u00e4ure, Kupfer, Mangan, Phosphor, Eisen und Zink.<\/p>\n<p>Sie haben einen tollen Geschmack und eine gute Textur und in Kombination mit aromatischen Gew\u00fcrzen und anderen pflanzlichen Zutaten erinnern sie sogar ein wenig an Hackfleisch. Deshalb sind sie die perfekte F\u00fcllung f\u00fcr vegetarische Enchiladas. Mit Br\u00fche auff\u00fcllen und zum Kochen bringen und die Hitze dann reduzieren. Bei geschlossenem Deckel etwa 20 Minuten (oder bis sie weich sind) k\u00f6cheln lassen. Dann den Topf vom Herd nehmen, aber weitere 10 Minuten zugedeckt lassen.<\/p>\n<h4>Schritt 2: Herstellung der Enchilada-Sauce<\/h4>\n<p>W\u00e4hrend die Linsen kochen, kannst du die Enchilada-Sauce herstellen, indem du zuerst das Oliven\u00f6l in einer Pfanne bei mittlerer Hitze erhitzt. Alle Gew\u00fcrze hinzuf\u00fcgen und etwa 2 Minuten anbraten. Das Mehl einr\u00fchren und eine weitere Minute anbraten, dabei h\u00e4ufig umr\u00fchren. Die Tomatensauce hinzugeben und zum Kochen bringen. Etwa 5 Minuten kochen lassen, bis die So\u00dfe eingedickt ist.<\/p>\n<h4>Schritt 3: Enchilada-F\u00fcllung zubereiten<\/h4>\n<p>In einer Pfanne \u00d6l bei mittlerer Hitze erhitzen. Zwiebel + Knoblauch hinzuf\u00fcgen und 3-4 Minuten unter gelegentlichem R\u00fchren anbraten. Gehackte Paprikaschoten, Tomate, geriebene Karotte und 1-2 scharfe Chilischoten zugeben und 5-7 Minuten d\u00fcnsten. Die Mischung sollte zusammenhalten und die Textur sollte wie auf den Bildern unten aussehen. Ich habe zwei Schichten mit je 4 Wraps gemacht (18 x 28 cm Backform), aber man kann auch nur eine Schicht mit 8 St\u00fcck machen. Waln\u00fcsse sind zum Beispiel ein toller Ersatz.<\/li>\n<li><strong>Andere Mehloptionen<\/strong> &#8211; Anstelle von gemahlenem Hafer kannst du auch jedes andere Mehl deiner Wahl verwenden. Zum Beispiel eine glutenfreie Mehlmischung oder Kichererbsenmehl.<\/li>\n<li><strong>Tortillas<\/strong> &#8211; Ich habe selbstgemachte glutenfreie Tortillas verwendet. Manchmal verwende ich auch diese glutenfreien Spinat-Tortillas. Du kannst jedoch auch normale Weizentortillas verwenden, wenn du dich nicht glutenfrei ern\u00e4hrst.<\/li>\n<li><strong>Du kannst gekochte Bohnen oder aber Kichererbsen anstelle von Linsen verwenden<\/strong>. Sojaschnetzel w\u00e4ren ebenfalls eine Option.<\/li>\n<li><strong>Veganer K\u00e4se<\/strong> &#8211; ich habe diese Enchiladas mit meiner veganen K\u00e4sesauce \u00fcberbacken, was sie noch k\u00f6stlicher macht. Die Zubereitung dauert zudem nur 3 Minuten. Wenn du Saucen- oder F\u00fcllungsreste hast, dann bewahre sie separat in einem luftdichten Beh\u00e4lter im K\u00fchlschrank auf. Sie k\u00f6nnen au\u00dferdem bis zu 3 Monate lang eingefroren werden.
