Bei der Herstellung von Risotto wird warme Br\u00fche (normalerweise H\u00fchnerbr\u00fche) portionsweise zum Reis einger\u00fchrt. Sobald die Fl\u00fcssigkeit absorbiert wurde, wird mehr Br\u00fche hinzugef\u00fcgt. Diese Kochmethode bewirkt, dass der Reis seine St\u00e4rke freisetzt, und f\u00fchrt daher zu einem <strong>cremigen<\/strong> Risotto-Gericht.<\/p>\n<p>Nat\u00fcrlich habe ich keine H\u00fchnerbr\u00fche f\u00fcr mein veganes Risotto verwendet, sondern Gem\u00fcsebr\u00fche. Ein klassisches Risotto enth\u00e4lt oft auch Butter und K\u00e4se. Ich bevorzuge die ges\u00fcndere Version ohne Butter, aber mit Pilzen und Kichererbsen. Es ist eigentlich ziemlich einfach, ein gesundes Risotto zuzubereiten, das trotzdem cremig und lecker ist. Dieses Rezept erfordert nur wenige Schritte, die \u00fcberhaupt nicht kompliziert sind. Ein schmackhaftes und einfach zu machendes Rezept, perfekt als Abendessen. #veganesrisotto #pilzrisotto #veganessen #elasrecipes | elavegan.de\" \/><\/p>\n<ol>\n<li>Die Zwiebel w\u00fcrfeln und die anderen Zutaten vorbereiten.<\/li>\n<li>Kokos\u00f6l in einer Pfanne erhitzen, die H\u00e4lfte der gew\u00fcrfelten Zwiebel und des gehackten Knoblauchs unterr\u00fchren. Bei mittlerer Hitze wenige Minuten anbraten, dann Risottoreis hinzuf\u00fcgen und ca. 1 Minute r\u00fchren.<\/li>\n<li>Den Wein eingie\u00dfen und st\u00e4ndig umr\u00fchren, bis der Wein verdampft ist.<\/li>\n<li>Ca. 100 ml Gem\u00fcsebr\u00fche hinzugeben und bei schwacher Hitze k\u00f6cheln lassen, bis die Br\u00fche vollst\u00e4ndig aufgenommen wurde. Regelm\u00e4\u00dfig umr\u00fchren und portionsweise mehr Br\u00fche hinzugeben, bis die Fl\u00fcssigkeit absorbiert und das Risotto al dente und cremig ist (ca. 15 Minuten).<\/li>\n<li>Pilze in Scheiben schneiden. Du kannst Champignons oder andere Pilze deiner Wahl verwenden.<\/li>\n<li>In einer anderen Pfanne das restliche Kokos\u00f6l erhitzen, die andere H\u00e4lfte der gew\u00fcrfelten Zwiebel und des gehackten Knoblauchs hinzuf\u00fcgen und bei mittlerer Hitze ein paar Minuten anbraten. Die Pilze und Kichererbsen hinzugeben, ca. 3-5 Minuten lang anbraten, danach Balsamico-Essig und Sojasauce dazugeben.<\/li>\n<li>Nun die Kokosmilch einr\u00fchren und alles unter gelegentlichem R\u00fchren etwa 5 Minuten k\u00f6cheln lassen.<\/li>\n<li>Mit schwarzem Pfeffer, Chiliflocken, Salz nach Geschmack und frischer Petersilie abschmecken.<\/li>\n<\/ol>\n<p>Zum Schluss die Pilz-Kichererbsen-Mischung mit dem Risottoreis kombinieren, die Hefeflocken unterr\u00fchren und genie\u00dfen!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-11089 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2018\/01\/stirring-risotto-with-mushrooms-in-a-black-pan.jpg\" alt=\"Risotto mit Pilzen und Kichererbsen wird in einer schwarzen Pfanne umger\u00fchrt\" width=\"1200\" height=\"1620\" data-pin-description=\"Cremiges und leckeres Pilzrisotto in vegan! Du musst den Reis nicht st\u00e4ndig r\u00fchren, aber alle paar Minuten solltest du mal umr\u00fchren. Das Hinzuf\u00fcgen der Br\u00fche (portionsweise) ist ebenfalls ein Muss damit der Reis die St\u00e4rken freisetzt.<\/p>\n<p><strong>Kann ich normalen Reis verwenden?<\/strong> Ich empfehle Risottoreis zu verwenden (zum Beispiel Arborio, Carnaroli, Vialone, Nano oder Baldo) aufgrund der St\u00e4rke. Wenn du jedoch keinen Risottoreis zu Hause hast, kannst du auch normalen wei\u00dfen Reis verwenden (ich habe beides probiert). Das vegane Pilzrisotto wird aufgrund der Kokosmilch immer noch lecker und cremig sein, aber es ist nicht traditionell, normalen Reis f\u00fcr Risotto zu verwenden.<\/p>\n<p><strong>Kann ich andere Milch verwenden?<\/strong> Sicher! Du kannst jede andere pflanzliche Milch deiner Wahl wie Mandelmilch, Hafermilch, Cashewmilch usw. verwenden. Das Pilz-Risotto wird jedoch weniger cremig, da Kokosmilch aus der Dose fettreicher ist.<\/p>\n<p><strong>Wie aufbewahren?<\/strong> Bewahre Risotto-Reste bis zu 3 Tage in einem luftdichten Beh\u00e4lter im K\u00fchlschrank auf.<\/p>\n<p><strong>Kann ich Risotto einfrieren?<\/strong> Ich empfehle es nicht, Risotto einzufrieren, da der Reis die Textur nach dem Aufw\u00e4rmen ver\u00e4ndert.<\/p>\n<p><strong>Pilzrisotto mit Erbsen:<\/strong> Du kannst auch gr\u00fcne Erbsen anstelle von Kichererbsen verwenden (entweder aus dem Glas\/Dose oder gefrorene Erbsen\/aufgetaut).<\/p>\n<p><strong>Veganer Parmesan:<\/strong> Wie bereits erw\u00e4hnt, enthalten die meisten Risotto-Rezepte K\u00e4se\/Parmesan. Du kannst jedoch auch Hefeflocken verwenden, um dieses Gericht noch schmackhafter zu machen.
