So sehr ich normales Tiramisu aus der Auflaufform auch liebe, es ist nicht gerade ein Nachtisch, den ich oft zubereite.<\/p>\n<p>Zum Gl\u00fcck kann dieses Schichtdessert im Glas einzeln und schnell zubereitet werden, sodass man sich weder um das Festwerden der Mascarponecreme (und somit auch nicht um die Ruhezeit nach dem Zusammensetzen), noch um die Textur oder um saubere Schichten sorgen muss. Alles, was du f\u00fcr diese Creme-Schicht brauchst, ist:<\/p>\n<ul>\n<li><strong>Seidentofu:<\/strong> Damit l\u00e4sst sich eine super-seidige, cremige Schicht herstellen, die der Mascarpone-Creme \u00e4hnelt (ohne nach Tofu zu schmecken). Verwende festen Seidentofu und keinen normalen mittelweichen Seidentofu (es sei denn, es geht nicht anders, aber ich empfehle es nicht), da der Geschmack und die Textur anders sind. Eine tofufreie Variante findest du im Abschnitt Rezeptvariationen weiter unten.<\/li>\n<li><strong>Ahornsirup:<\/strong> Oder ein fl\u00fcssiges S\u00fc\u00dfungsmittel deiner Wahl (wie Agavendicksaft, brauner Reissirup, Dattelsirup, Malzsirup, usw.).<\/li>\n<li><strong>Kokosmilch:<\/strong> F\u00fcr besonders cremige Ergebnisse benutze Vollfett-Kokosmilch aus der Dose.<\/li>\n<li><strong>Vanilleextrakt:<\/strong> Nimm nat\u00fcrliche, reine Vanille, um den besten Geschmack zu erzielen.<\/li>\n<li><strong>Kokos\u00f6l:<\/strong> Hilft, die Creme nach dem Abk\u00fchlen zu stabilisieren.<\/li>\n<li><strong>Instant-Espressopulver:<\/strong> Oder 2-3 Teel\u00f6ffel starker Kaffee\/Espresso. Passe die Menge deinem pers\u00f6nlichen Geschmack an.<\/li>\n<li><strong>Salz:<\/strong> Eine Prise Salz verst\u00e4rkt die verschiedenen Aromen in der Cremeschicht.<\/li>\n<\/ul>\n<h3>Die Schokoschicht<\/h3>\n<p>Diese einfache, ohne raffinierten Zucker hergestellte Schokoladenschicht verleiht dem gesunden Tiramisu-Rezept mehr Schokogeschmack als ein einfaches Best\u00e4uben mit Kakao am Ende und bringt es wirklich auf das n\u00e4chste Level.<\/p>\n<ul>\n<li><strong>Kakaopulver:<\/strong> Ich empfehle unges\u00fc\u00dftes Kakaopulver.<\/li>\n<li><strong>Ahornsirup:<\/strong> Oder ein fl\u00fcssiges S\u00fc\u00dfungsmittel deiner Wahl.<\/li>\n<li><strong>Kokos\u00f6l:<\/strong> Geschmolzen.<\/li>\n<li><strong>Espressopulver:<\/strong> Eine Prise verst\u00e4rkt den Schokoladengeschmack, ohne nach Kaffee zu schmecken. Etwas mehr, und du erh\u00e4ltst eine k\u00f6stliche Mokkaschicht.<\/li>\n<li><strong>Salz:<\/strong> Nur eine Prise zur Verst\u00e4rkung des Kakaogeschmacks.<\/li>\n<\/ul>\n<h2>Optionale Zutaten &amp; Rezeptvariationen<\/h2>\n<ul>\n<li><strong>Zitrusschalen:<\/strong> 1-2 Teel\u00f6ffel geriebene Orangen- und\/oder Zitronenschalen in der Cremeschicht sorgen f\u00fcr einen intensiven Geschmack und eignen sich f\u00fcr ein klassisches Tiramisu oder ein Weihnachts-Tiramisu mit Lebkuchen.<\/li>\n<li><strong>Sojafreie Variante:<\/strong> Wenn du die vegane Mascarponecreme ohne Tofu zubereiten m\u00f6chtest, verwende Cashewcreme (etwa 1 \u00bd Tassen eingeweichte Cashews mit Wasser mixen), zus\u00e4tzliche Kokoscreme oder veganen Frischk\u00e4se.<\/li>\n<li><strong>Nussfrei:<\/strong> Der Lebkuchen enth\u00e4lt gemahlene Mandeln. Du kannst sie jedoch durch gemahlene Sonnenblumenkerne (oder Hanfsamen, die allerdings einen st\u00e4rkeren Geschmack haben) ersetzen.<\/li>\n<li><strong>Aromen:<\/strong> Kaffeelik\u00f6r, Amaretto, Marsala-Wein, dunkler Rum, Brandy usw. verleihen dem Kuchen einen besonderen Geschmack. Ich bevorzuge die Kuchenschichten mit dem Lik\u00f6r zu bestreichen, um zu vermeiden, dass er zu sehr einweicht.<\/li>\n<li><strong>Koffeinfrei:<\/strong> Benutze koffeinfreien Kaffee ODER tausche den Kaffee gegen hei\u00dfen Kakao aus.<\/li>\n<li><strong>Schokoladencreme:<\/strong> Gib etwas geschmolzene Zartbitterschokolade in die Creme, wenn du noch mehr Schokoladengenuss willst. F\u00fcr diese Variante habe ich selbstgemachte Lebkuchen (Rezept unten) und Schoko-Brownies genommen. So bereitest du die Lebkuchenschicht vor:<\/p>\n<ul>\n<li>Zuerst alle trockenen Zutaten in eine R\u00fchrsch\u00fcssel und die feuchten Zutaten in eine andere Sch\u00fcssel geben und den Inhalt beider Sch\u00fcsseln gut verr\u00fchren\/verquirlen.<\/li>\n<li>Dann die feuchten Zutaten in die gro\u00dfe Sch\u00fcssel mit den trockenen Zutaten geben und mit dem Schneebesen vermengen.<\/li>\n<\/ul>\n<p>Dieses Rezept enth\u00e4lt kein Gluten, trotzdem ist es am besten, den Teig nicht zu lange zu r\u00fchren.<\/p>\n<ul>\n<li>Dann den Lebkuchenteig in ein Muffin-Backblech f\u00fcllen und bei 190 \u00b0C 25-35 Minuten backen, bis ein Zahnstocher in der Mitte sauber herauskommt.<\/li>\n<\/ul>\n<p>Du kannst auch eine normale gro\u00dfe Backform nehmen. Die Backzeit variiert, daher solltest du mit der Zahnstocher-Methode pr\u00fcfen, ob der Kuchen fertig ist. Sobald der Lebkuchen fertig ist, zum Abk\u00fchlen beiseitestellen.<\/p>\n<h3>Schritt 2: Die vegane Mascarponecreme zubereiten<\/h3>\n<ul>\n<li>Alle Zutaten f\u00fcr die Cremeschicht in einen Mixer geben und so lange mixen, bis sie glatt und cremig ist.<\/li>\n<\/ul>\n<p>Wenn der Seidentofu, den du benutzt, nicht so fest ist, ist es am besten, weniger Kokosmilch zu nehmen. Ich empfehle, anfangs nur die H\u00e4lfte hinzuzugeben und dann bis zur gew\u00fcnschten Konsistenz zu erh\u00f6hen.<\/p>\n<p><em>Anstatt den Kaffee in der Cremeschicht zu verarbeiten, kannst du ihn auch weglassen und stattdessen jede Kuchenschicht mit etwas starkem Kaffee\/Espresso (Zimmertemperatur oder gek\u00fchlt) betr\u00e4ufeln\/bestreichen.<\/em><\/p>\n<h3>Schritt 3: Die Schokoschicht vorbereiten<\/h3>\n<ul>\n<li>Alle Zutaten in einer kleinen Sch\u00fcssel vermengen und gut verquirlen. Wenn die Masse zu dick ist, etwas mehr Ahornsirup dazugeben.
