Jahrhundert in N\u00fcrnberg bekannt wurde.<\/p>\n<p>Er wird traditionell mit kr\u00e4ftigen Gew\u00fcrzen wie Ingwer, Kardamom, Zimt, Nelken usw. in einem mit Honig ges\u00fc\u00dften Teig, mit gemahlenen N\u00fcssen (f\u00fcr die weiche Konsistenz) und manchmal mit kandierten Fr\u00fcchten oder einer F\u00fcllung wie Marmelade hergestellt.<\/p>\n<p>Deutscher Lebkuchen ist weltweit bekannt, dazu z\u00e4hlt vor allem der N\u00fcrnberger Elisen-Lebkuchen und die Aachener Printen. Im Supermarkt werden Lebkuchen h\u00e4ufig mit Schokoladenglasur verkauft, beispielsweise als Herzen\/ Sterne\/ Brezeln (so wie ich sie gemacht habe) oder als kleine, mit Marmelade gef\u00fcllte Lebkuchenherzen.<\/p>\n<p>Ich habe dieses Lebkuchen Rezept zu 100 % vegan gemacht, indem ich den Honig durch Dattelsirup und die Butter durch Nussmus ersetzt habe. F\u00fcr eine nussfreie Version k\u00f6nnen auch gemahlene Sonnenblumenkerne genommen werden.<\/li>\n<li><strong>Backpulver:<\/strong> Verleiht dem Gew\u00fcrzkuchen die gew\u00fcnschte Luftigkeit.<\/li>\n<li><strong>Kakaopulver:<\/strong> Nur ein wenig, um die Farbe und den Geschmack zu intensivieren.<\/li>\n<li><strong>Gew\u00fcrze:<\/strong> Falls du kein Lebkuchengew\u00fcrz finden kannst, kannst du es auch selbst herstellen (siehe FAQs unten).<\/li>\n<li><strong>Orangenschale: <\/strong>Oder Zitronen-\/Mandarinenschale. Schon eine kleine Menge verleiht dem Lebkuchen einen Hauch von Zitrusfrucht.<\/li>\n<li><strong>Dattelsirup:<\/strong> Oder Ahornsirup. Dies ist das Haupts\u00fc\u00dfungsmittel in diesem Lebkuchenrezept. Ein anderes fl\u00fcssiges S\u00fc\u00dfungsmittel w\u00fcrde auch funktionieren.<\/li>\n<li><strong>Mandelmus:<\/strong> Oder ein anderes Nuss- oder Kernmus. Z.B. Haselnussmus, Sonnenblumenkernmus, etc. Dient als Bindemittel und ersetzt normale Butter.<\/li>\n<li><strong>Pflanzenmilch:<\/strong> Ich empfehle die Verwendung von Kokosnussmilch aus der Dose, mit mindestens 10 % Fettgehalt, um ein optimales Ergebnis zu erzielen. Sie sorgt f\u00fcr eine optimale Textur und Feuchtigkeit.<\/li>\n<li><strong>Getrocknete Aprikosen:<\/strong> Fein gehackt, um zus\u00e4tzliche Struktur und S\u00fc\u00dfe hinzuzuf\u00fcgen. Gehacktes Orangeat (und\/oder Zitronat) funktioniert auch.<\/li>\n<\/ul>\n<h3>Schokoladenglasur<\/h3>\n<ul>\n<li><strong>Vegane Schokolade:<\/strong> Ich bevorzuge Zartbitterschokolade (mit mindestens 70 % Kakaoanteil), aber auch andere vegane Schokoladensorten sind geeignet.<\/li>\n<li><strong>Kokos\u00f6l (optional):<\/strong> Damit die Schokolade geschmeidiger wird und sich besser zum Eintauchen eignet.<\/li>\n<\/ul>\n<h2>Optionale Zus\u00e4tze und Rezeptvariationen<\/h2>\n<ul>\n<li><strong>Salz:<\/strong> Nur eine Prise, um die Aromen in den Schokolebkuchen auszubalancieren und zu verst\u00e4rken.<\/li>\n<li><strong>Back-Oblaten:<\/strong> Backoblaten (oder Kommunion-Oblaten) wurden traditionell als Grundlage f\u00fcr runde Elisen-Lebkuchen verwendet und k\u00f6nnen in deutschen Feinkostl\u00e4den oder online gekauft werden.<\/li>\n<li><strong>Ingwer-Krokant:<\/strong> Anstelle von oder zusammen mit getrockneten Aprikosen verwenden.<\/li>\n<li><strong>Puderzuckerglasur:<\/strong> Puderzucker + Wasser, Apfelsaft, Orangensaft oder Weinbrand zu einem Guss verr\u00fchren und die Lebkuchen-Kekse damit bestreichen oder eintauchen (solange sie noch warm sind). Manchmal wird auch Vanille- und\/oder Rumextrakt hinzugef\u00fcgt. Trocknen lassen und nach Belieben eine zweite Schicht auftragen.
