Es gibt mehrere Hauptgr\u00fcnde, warum es eine unverzichtbares Backzutat ist:<\/p>\n<ol>\n<li><strong>F\u00fcr mehr Feuchtigkeit:<\/strong> \u00d6l ist, mehr noch als Butter (die etwas Wasser enth\u00e4lt, das beim Backen verdunstet), eine der wichtigsten Zutaten f\u00fcr saftige Backwaren, die l\u00e4nger ihre Feuchtigkeit beibehalten.<\/li>\n<li><strong>F\u00fcr eine perfekte Textur:<\/strong> Es reduziert die Entwicklung von Gluten, indem es das Mehl umh\u00fcllt und au\u00dferdem verhindert, dass Wasser w\u00e4hrend des Backens verdunstet, was zu einem weichen, glatten und zarten Geb\u00e4ck beitr\u00e4gt. Es wird normalerweise in Kuchen, Muffins, Cupcakes und Brownies verwendet, die feucht und etwas saftiger sein sollen (d. h. keine knusprigen Kekse). Feuchtigkeit und Saftigkeit zu verleihen (zusammen mit versteckten N\u00e4hrstoffen!).<\/p>\n<p><strong>Fruchtp\u00fcrees:<\/strong> Ich verwende vor allem zerdr\u00fcckte Bananen, aber auch Birnen- oder Aprikosenp\u00fcree funktioniert.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31855 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/banana-mashed.jpg\" alt=\"Mit Gabel zerdr\u00fcckte Banane in einem Sch\u00e4lchen\" width=\"768\" height=\"915\" \/><\/p>\n<p><strong>Gem\u00fcsep\u00fcrees:<\/strong> Die beiden beliebtesten Versionen, die ich kenne (und verwendet habe), sind K\u00fcrbisp\u00fcree und S\u00fc\u00dfkartoffelp\u00fcree. Avocadop\u00fcree (obwohl es eigentlich eine Frucht ist) eignet sich ebenfalls sehr gut und enth\u00e4lt viele herzgesunde Fette, die auch f\u00fcr eine gewisse Reichhaltigkeit sorgen.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31848 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/Pumpkin-Puree.jpg\" alt=\"K\u00fcrbisp\u00fcree\" width=\"720\" height=\"784\" \/><\/p>\n<p>Sie funktionieren \u00e4hnlich wie Apfelmus, beeinflussen aber den Geschmack und die Farbe st\u00e4rker. In vielen F\u00e4llen verleihen sie Muffins und Kuchen einen zus\u00e4tzlichen Geschmack. Kuchen, die mit Obst-\/Gem\u00fcsep\u00fcrees hergestellt werden, sind auch etwas weniger luftig, als solche mit festen Fetten, da sie den Teig nicht &#8220; auflockern&#8220;.<\/p>\n<p>Bei der Verwendung von P\u00fcrees, empfehle ich keinen direkten 1:1-Austausch. Stattdessen verwende ich eher <strong>50-75%<\/strong>. D. h. f\u00fcr jede <strong>1\/2 Tasse \u00d6l, verwende ich zwischen 1\/4 bis 1\/3 Tasse P\u00fcree<\/strong>. nur die N\u00fcsse und manchmal ein wenig Salz enthalten), mit denen man Pflanzen\u00f6l beim Backen hervorragend ersetzen kann.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31845 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/nut-butter.jpg\" alt=\"Nussmus in weisser Schale\" width=\"822\" height=\"907\" \/><\/p>\n<p>Bei der Herstellung von Nussmus, trennen sich die festen Bestandteile der N\u00fcsse von ihren \u00d6len, so dass eine &#8222;pastenartige&#8220; Textur entsteht. Diese nat\u00fcrlichen \u00d6le ersetzen die verarbeiteten \u00d6le in Backwaren und sorgen f\u00fcr reichhaltige und k\u00f6stliche Ergebnisse. Bitte beachte jedoch, dass diese den Backwaren mehr Geschmack verleihen, als einige andere \u00d6l-Ersatz-Produkte in dieser Liste. Die genaue Menge, die anstelle von \u00d6l durch Nussmus verwendet werden muss, kann je nach Rezept variieren. Allerdings verleiht sie den Backwaren oft einen subtilen Kokosgeschmack.<\/p>\n<p><a href=\"https:\/\/elavegan.com\/de\/kokosmilch-selber-machen-rezept\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31846 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/coconut-milk.jpg\" alt=\"Kokosmilch wird in eine Holzschale gegossen\" width=\"800\" height=\"1024\" \/><\/a><\/p>\n<p>Um Kokosmilch anstelle von \u00d6l zu verwenden, sollten auch die Fl\u00fcssigkeitsmengen im Rezept ber\u00fccksichtigt werden. Ein Beispiel: <strong>1 Tasse Kokosmilch ersetzt 1\/4 Tasse \u00d6l + 3\/4 Tasse Fl\u00fcssigkeit (Milch, Wasser, usw.)<\/strong>. Dazu geh\u00f6ren:<\/p>\n<h3>Seidentofu:<\/h3>\n<p>Seidentofu ist reich an Proteinen, kann zu einem P\u00fcree verarbeitet werden und dann als (Ei- oder) \u00d6l-Alternative in Kuchen, Muffins, Keksen, Brownies usw. verwendet werden. Er eignet sich am besten f\u00fcr saftige Kuchen, mit kr\u00e4ftigen Aromen (wie Schokolade oder Kaffee).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31849 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/Silken-Tofu.jpg\" alt=\"Seidentofu in weisser Sch\u00fcssel\" width=\"624\" height=\"696\" \/><\/p>\n<p>Um \u00d6l durch Seidentofu zu ersetzen, empfehle ich, <strong>1\/3 Tasse Seidentofu f\u00fcr jede 1\/2 Tasse \u00d6l<\/strong>, die in einem Rezept ben\u00f6tigt wird, zu verwenden. Seidentofu benutze ich gerne f\u00fcr <a href=\"https:\/\/elavegan.com\/de\/herzhafte-gemuese-muffins\/\"><strong>herzhafte Gem\u00fcsemuffins<\/strong><\/a>.<\/p>\n<p><a href=\"https:\/\/elavegan.com\/de\/herzhafte-gemuese-muffins\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-18239 size-large\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2021\/09\/close-up-of-savory-muffins-on-white-plate-1080x1440.jpg\" alt=\"Nahaufnahme von herzhaften Gem\u00fcse-Muffins auf wei\u00dfem Teller\" width=\"720\" height=\"960\" \/><\/a><\/p>\n<h3>Aquafaba:<\/h3>\n<p>Aquafaba ist die Fl\u00fcssigkeit, die in einer Dose Kichererbsen ist oder beim Kochen von Kichererbsen entsteht. Der Geschmack ist recht neutral und die etwas dickfl\u00fcssige Textur \u00e4hnelt (fast) einem \u00d6l. Das Beste von allem ist jedoch, dass Aquafaba reich an N\u00e4hrstoffen wie Eisen und Fols\u00e4ure ist.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31850 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/Aquafaba.jpg\" alt=\"Aquafaba in weissem Sch\u00e4lchen\" width=\"499\" height=\"530\" \/><\/p>\n<p>Ich verwende Aquafaba eigentlich eher als Ei-Ersatz (vor allem, wenn es aufgeschlagen wird, wie in meiner <a href=\"https:\/\/elavegan.com\/de\/vegane-erdnussbutter-mousse\/\"><strong>Erdnussbutter-Mousse<\/strong><\/a>), als f\u00fcr \u00d6l, obwohl es theoretisch f\u00fcr beides geeignet ist. Um \u00d6l durch Aquafaba zu ersetzen, <strong>sollte das Verh\u00e4ltnis von Aquafaba zu \u00d6l gleich sein<\/strong>, z. B. bei Kuchen, Muffins, Keksen und Riegeln\/Schnitten (obwohl sie dann nicht so &#8222;reichhaltig&#8220; sind). Ich habe es f\u00fcr meinen <a href=\"https:\/\/elavegan.com\/de\/zitronenkuchen-vom-blech-vegan\/\"><strong>Zitronenkuchen<\/strong><\/a> verwendet.<\/p>\n<p><a href=\"https:\/\/elavegan.com\/de\/zitronenkuchen-vom-blech-vegan\/\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-7208 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2019\/08\/Vegan-lemon-cake-with-a-sugar-free-icing.jpg\" alt=\"Veganer Zitronenkuchen mit einer zuckerfreien Glasur\" width=\"768\" height=\"1005\" \/><\/a><\/p>\n<h3>Veganer Jogurt<\/h3>\n<p>Es gibt verschiedene M\u00f6glichkeiten, \u00d6l durch Milchprodukte zu ersetzen, aber beim veganen Backen habe ich bisher nur veganen Joghurt ausprobiert. Joghurt macht den Teig feucht und reichhaltig und ist dabei viel kalorien\u00e4rmer als \u00d6l. Wenn er besonders s\u00e4urehaltig ist, kann er auch mit den Backtriebmitteln reagieren und den Kuchen fluffiger machen.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-31851 size-full\" src=\"https:\/\/elavegan.com\/wp-content\/uploads\/2023\/07\/Dairy-Free-Yogurt.jpg\" alt=\"Veganer Jogurt in Schale\" width=\"720\" height=\"758\" \/><\/p>\n<p>Um Joghurt anstelle von \u00d6l zu verwenden, empfehle ich <strong>ein Verh\u00e4ltnis von 1:1<\/strong> (etwas weniger, wenn der Joghurt sehr dick ist). Bitte beachte, dass der Joghurt einen s\u00e4uerlichen Geschmack hat, der sich auf die Backwaren \u00fcbertr\u00e4gt.<\/p>\n<p>Wie du siehst, kannst du \u00d6l problemlos mit vielen anderen gesunden Zutaten ersetzen.
