Das perfekte Wetter f\u00fcr gem\u00fctliche Klassiker wie <a href=\"https:\/\/elavegan.com\/de\/linsenpfanne-kartoffelbrei-vegan\/\"><strong>Eint\u00f6pfe<\/strong><\/a>, herzhafte <a href=\"https:\/\/elavegan.com\/de\/vegane-nudelgerichte\/\"><strong>Pasta<\/strong><\/a>, <a href=\"https:\/\/elavegan.com\/de\/blumenkohl-curry-backofen\/\"><strong>Aufl\u00e4ufe<\/strong><\/a> und jede Menge <a href=\"https:\/\/elavegan.com\/de\/vegane-suppen-rezepte\/\"><strong>Suppen<\/strong><\/a>. Neben k\u00f6stlicher <a href=\"https:\/\/elavegan.com\/de\/kohlsuppe\/\"><strong>Kohlsuppe<\/strong><\/a> genie\u00dfe ich derzeit sehr gerne diese cremige kalorienarme Brokkolisuppe!<\/p>\n<p>Ich habe bereits ein Rezept f\u00fcr eine <a href=\"https:\/\/elavegan.com\/de\/brokkoli-kaese-suppe\/\"><strong>vegane Brokkoli-K\u00e4se-Suppe<\/strong><\/a> ver\u00f6ffentlicht, daher wollte ich etwas Leichteres ausprobieren, das trotzdem cremig und s\u00e4ttigend ist. Diese Kartoffel-Brokkoli-Suppe schmeckt nicht nur gut, sondern ist auch schnell und unkompliziert zubereitet, mit preiswerten Zutaten, geschmackvoll und mit viel Gem\u00fcse (wie Sellerie und Kartoffeln) und Pflanzencreme, f\u00fcr eine wohltuende Mahlzeit mit vielen N\u00e4hrstoffen und Ballaststoffen.<\/p>\n<p>Selbst Veggie-Muffel werden diese cremige Suppe lieben (und w\u00fcrden nie erraten, dass sie vegan ist). Zudem den Knoblauch hacken, die Zwiebel w\u00fcrfeln, die Sellerie und die Kartoffeln in \u00e4hnliche Gr\u00f6\u00dfen wie die Brokkolistiele schneiden.<\/li>\n<\/ul>\n<p><em>Optional einige R\u00f6schen zur\u00fcckbehalten, um eine knusprige Suppeneinlage herzustellen. Dazu die R\u00f6schen d\u00e4mpfen, bis sie weich sind, dann in \u00d6l anbraten, bis sie leicht gebr\u00e4unt sind. Mit Salz und Pfeffer w\u00fcrzen.<\/em><\/p>\n<ul>\n<li>Das \u00d6l in einem gro\u00dfen Topf bei mittlerer Hitze erhitzen. Zwiebel, Sellerie und Brokkolist\u00e4ngel hinzuf\u00fcgen und 4-5 Minuten anbraten. Knoblauch, Kartoffeln und Gew\u00fcrze einr\u00fchren und eine weitere Minute anbraten.<\/li>\n<li>Die Br\u00fche und die Lorbeerbl\u00e4tter hinzuf\u00fcgen und die Suppe bei starker Hitze zum Kochen bringen.<\/li>\n<li>Die Hitze auf mittlere bis niedrige Stufe reduzieren und 10-12 Minuten k\u00f6cheln lassen. Am zweiten Tag schmeckt sie noch besser.<\/p>\n<p><strong>Einfrieren:<\/strong> Die Reste 3 Monate lang in gefriersicheren Ziplock-Beuteln (flach ausgebreitet, ohne \u00fcbersch\u00fcssige Luft) oder in einem luftdichten Beh\u00e4lter einfrieren (mit gen\u00fcgend Platz zum Ausdehnen). Vor dem Wiederaufw\u00e4rmen \u00fcber Nacht im K\u00fchlschrank auftauen lassen.<\/p>\n<p><strong>Wieder aufw\u00e4rmen:<\/strong> Die Suppe auf dem Herd oder in der Mikrowelle wieder aufw\u00e4rmen, bis sie hei\u00df ist. Der Geschmack kann leicht variieren.<\/p>\n<h3>Kann ich Brokkolisuppe im Schongarer zubereiten?<\/h3>\n<p>Zun\u00e4chst sollten die Zutaten auf dem Herd angebraten werden. Dann in den Schongarer geben und auf hoher Stufe 3-4 Stunden oder auf niedriger Stufe 6-8 Stunden garen, wobei die Brokkolir\u00f6schen in den letzten 2 Stunden (niedrig) bzw. 1 Stunde (hoch) zugegeben werden.
