Jedes Jahr habe ich es mir zur Aufgabe gemacht, mindestens ein neues Pl\u00e4tzchen-Rezept zu veganisieren (und glutenfrei zu machen), wie zum Beispiel <a href=\"https:\/\/elavegan.com\/de\/lebkuchen-plaetzchen\/\"><strong>Lebkuchen-Pl\u00e4tzchen<\/strong><\/a>, <a href=\"https:\/\/elavegan.com\/de\/saftige-vegane-kokosmakronen\/\"><strong>Kokosmakronen<\/strong><\/a> und jetzt diese Vanillekipferl.<\/p>\n<p>Sie eignen sich perfekt zum Mitnehmen zu Weihnachtsveranstaltungen, zum Verschenken und zu <a href=\"https:\/\/elavegan.com\/de\/heisse-schokolade\/\"><strong>hei\u00dfer Schokolade<\/strong><\/a> und <a href=\"https:\/\/elavegan.com\/de\/gluehwein-rezept\/\"><strong>Gl\u00fchwein<\/strong><\/a> w\u00e4hrend der Weihnachtszeit.<\/p>\n<h2>Was sind Vanillekipferl?<\/h2>\n<p>Vanillekipferl sind Pl\u00e4tzchen in Halbmondform und stammen urspr\u00fcnglich aus Wien und haben eine weiche Textur. Sie sind beliebt in \u00d6sterreich, Deutschland, der Schweiz, Polen, der Slowakei, Ungarn, der Tschechischen Republik und einigen anderen europ\u00e4ischen L\u00e4ndern und in der Weihnachtszeit ein Muss!<\/p>\n<p>Traditionell werden sie aus M\u00fcrbeteig hergestellt und enthalten somit Zutaten wie Butter, Mehl, Zucker, manchmal Eigelb und Vanille. Zudem werden sie mit gemahlenen N\u00fcssen (normalerweise gemahlene Waln\u00fcsse, aber auch gemahlene Haseln\u00fcsse oder Mandeln) und Vanillezucker aromatisiert.<\/p>\n<p>Bei meinem Rezept verzichte ich jedoch nicht nur auf alle tierischen Produkte, sondern ich habe sie auch ges\u00fcnder gemacht, indem ich Datteln und Nussmus anstelle von Zucker und Butter verwendet habe. Das Rezept ist vegan, glutenfrei und ohne raffinierten Zucker! #Vanillekipferl #kipferl #weihnachtskekse #veganekekse #Weihnachtspl\u00e4tzchen #veganepl\u00e4tzchen | elavegan.com\/de\" \/><\/p>\n<h2>Die Zutaten<\/h2>\n<p>F\u00fcr die Zubereitung dieses Vanillekipferl-Rezepts brauchst du nur ein paar g\u00e4ngige Zutaten aus der Speisekammer.<\/p>\n<ul>\n<li><strong>Gemahlene Mandeln:<\/strong> F\u00fcr diese gesunden Pl\u00e4tzchen eignen sich am besten fein, blanchierte gemahlene Mandeln. Aber auch andere gemahlene N\u00fcsse und Kerne sind geeignet.<\/li>\n<li><strong>Mehl:<\/strong> Ich habe 60 g Reismehl und 20 g Tapiokast\u00e4rke verwendet, glutenfreies Allzweckmehl geht auch. Einige Minuten bei Raumtemperatur ruhen lassen, bevor mit der Zubereitung fortgefahren wird.<\/p>\n<p><strong>Aufbewahren:<\/strong> In einem luftdicht verschlossenen Beh\u00e4lter bei Zimmertemperatur einige Wochen lang aufbewahren.<\/p>\n<p><strong>Einfrieren:<\/strong> Die Vanillekipferl am besten ohne den Zuckerbelag einfrieren. Hierzu die Kipferl auf einem gro\u00dfen Tablett ausbreiten und dann in einem Ziplock-Beutel mehrere Monate lang einfrieren. Mindestens 1 Woche lang in einem luftdichten Beh\u00e4lter durchziehen lassen und hierzu die leere Vanilleschote f\u00fcr weiteres Vanillearoma beif\u00fcgen.<\/p>\n<p>*F\u00fcr eine zuckerfreie Version kann eine Zuckeralternative wie z.B. Erythrit verwendet werden.<\/p>\n<h3>Kann ich auch nicht-blanchierte Mandeln verwenden?<\/h3>\n<p>Ja, obwohl es braune Flecken in den Vanillekipferln verursacht und die Pl\u00e4tzchen dunkler macht. Bei etwas l\u00e4ngerer Backzeit werden sie jedoch knuspriger.<\/li>\n<li><strong>Geduldig sein:<\/strong> Das Formen der Vanillekipferl kann ein wenig Zeit in Anspruch nehmen, wenn du es zum ersten Mal machst. Der Teig kann auch manchmal rei\u00dfen, aber die Risse lassen sich leicht mit einem angefeuchteten Finger ausbessern.<\/li>\n<li><strong>Verschiedene N\u00fcsse verwenden:<\/strong> Je nachdem, welche N\u00fcsse verwendet werden, \u00e4ndert sich die Farbe der veganen Pl\u00e4tzchen.<\/li>\n<li><strong>Hinzuf\u00fcgen des Puderzuckers:<\/strong> Falls der Puderzucker hinzugef\u00fcgt wird, w\u00e4hrend die Pl\u00e4tzchen noch warm sind (5-10 Minuten nach dem Backen), haftet er besser, falls die Pl\u00e4tzchen jedoch zu warm sind, schmilzt\/weicht er ein.
