Ich habe bereits Rezepte f\u00fcr <a href=\"https:\/\/elavegan.com\/de\/veganer-mozzarella-kaese\/\"><strong>veganen Mozzarella<\/strong><\/a>, <a href=\"https:\/\/elavegan.com\/de\/vegane-kaesesauce-einfaches-rezept\/\"><strong>vegane 3-Minuten-K\u00e4sesauce<\/strong><\/a> und sogar einen schnittfesten <a href=\"https:\/\/elavegan.com\/de\/veganer-kaese-rezept\/\"><strong>veganen K\u00e4se<\/strong><\/a> (wie ein sehr milder Cheddar) ver\u00f6ffentlicht. Jetzt ist dieser noch festere, schneidbare, raspelbare vegane Cheddar K\u00e4se an der Reihe.<\/p>\n<p>Aufbauend auf dem letzten festen K\u00e4se, ist dieser Cheddar K\u00e4se-Ersatz, geschmackvoller und w\u00fcrziger. Im Gegensatz zu vielen veganen K\u00e4se-Rezepten ist meine Version auch nussfrei (ohne Cashews). Tats\u00e4chlich ist dieses vegane K\u00e4se-Rezept ohne Milchprodukte, glutenfrei, nussfrei und sojafrei.<\/p>\n<p>Das Beste ist, dass dieses pflanzliches K\u00e4se-Rezept, wenn man die &#8222;besonderen&#8220; Zutaten (Agar Agar und Tapiokast\u00e4rke) auf Vorrat hat, preiswerter ist als der K\u00e4se im Supermarkt. Zudem ist die Zubereitung kinderleicht &#8211; einfach mixen, kochen und fertig.<\/p>\n<p>Er ist zwar nicht so schmelzend wie ein herk\u00f6mmlicher K\u00e4se, aber daf\u00fcr viel ges\u00fcnder und sehr lecker. Hierf\u00fcr kannst du entweder ger\u00f6stete Paprikaschoten aus dem Glas verwenden oder du r\u00f6stest sie selber.<\/li>\n<li><strong>Salz:<\/strong> Die Menge je nach Geschmack anpassen.<\/li>\n<li><strong>Aromastoffe:<\/strong> Zwiebel- und Knoblauchpulver verleihen dem veganen K\u00e4se eine besondere Geschmacksintensit\u00e4t.<\/li>\n<li><strong>Ger\u00e4uchertes Paprikapulver:<\/strong> Zur Verst\u00e4rkung des rauchigen Geschmacks.<\/li>\n<li><strong>Kurkumapulver:<\/strong> Nur eine Prise verst\u00e4rkt die Farbe vom Cheddar K\u00e4se.<\/li>\n<li><strong>Tahini:<\/strong> (Oder Cashewmus) Die Fette sorgen f\u00fcr einen cremigeren, reichhaltigeren veganen selbstgemachten K\u00e4se.<\/li>\n<li><strong>Tomatenmark:<\/strong> Der leicht s\u00e4uerliche Geschmack ist perfekt geeignet, um dem Cheddar etwas zus\u00e4tzliche W\u00fcrze zu verleihen und die Farbe zu verst\u00e4rken.<\/li>\n<li><strong>Olivenlake:<\/strong> Sie verleiht dem K\u00e4se einen salzigen, pikanten und kr\u00e4ftigen Geschmack, der &#8222;echtem&#8220; K\u00e4se \u00e4hnelt. Alternativ kann auch eine <a href=\"https:\/\/elavegan.com\/de\/eingelegte-zwiebeln\/\"><strong>P\u00f6kellake<\/strong><\/a> (z. B. <a href=\"https:\/\/elavegan.com\/de\/sauerkraut-selber-machen\/\"><strong>Sauerkrautsaft<\/strong><\/a>) oder Wasser in Kombination mit 2 Teel\u00f6ffeln Zitronensaft oder Apfelessig verwendet werden.<\/li>\n<li><strong>Hefeflocken:<\/strong> Verleihen dem K\u00e4se einen nussigen und k\u00e4sigen Geschmack.<\/li>\n<li><strong>Agar Agar:<\/strong> 100%iges Agar Pulver verwenden, damit wird der vegane K\u00e4se fest wird. Alternativ kann auch Kappa Carrageenan benutzt werden, aber die Methode und die Menge \u00e4ndern sich leicht (siehe FAQs).<\/li>\n<li><strong>Tapiost\u00e4rke:<\/strong> Sie dient in erster Linie dazu, dem K\u00e4se eine elastischere Konsistenz wie bei normalem Cheddar zu verleihen. Alternativ kann auch Pfeilwurzelmehl verwendet werden.<\/li>\n<\/ul>\n<h3>Optionale Zus\u00e4tze und Rezeptvariationen:<\/h3>\n<ul>\n<li><strong>Gew\u00fcrze:<\/strong> Eine Prise rote Chiliflocken (nach Geschmack) oder Chili-\/Cayennepulver hinzuf\u00fcgen.<\/li>\n<li><strong>Gemahlenes Senfpulver:<\/strong> Es verleiht eine dezente Sch\u00e4rfe und mehr W\u00fcrze.<\/li>\n<li><strong>Kr\u00e4uter:<\/strong> Dieses vegane K\u00e4se-Rezept l\u00e4sst sich leicht mit getrockneten Kr\u00e4utern, wie einer italienischen Kr\u00e4utermischung, Rosmarin, Oregano oder Thymian w\u00fcrzen. Beiseitestellen.<\/li>\n<li>Als N\u00e4chstes alle Zutaten au\u00dfer der Olivenlake und der Tapiost\u00e4rke in einen Hochgeschwindigkeitsmixer geben und so lange mixen, bis die Masse glatt und cremig ist.<\/li>\n<li>Die Mischung in einen Kochtopf geben und bei mittlerer Hitze unter h\u00e4ufigem R\u00fchren zum K\u00f6cheln bringen.<\/li>\n<li>Nach dem Aufkochen eine Zeitschaltuhr auf 4 Minuten einstellen und die Masse bei niedriger Hitze unter gelegentlichem R\u00fchren k\u00f6cheln und eindicken lassen.<\/li>\n<li>In der Zwischenzeit in einer kleinen Schale die Olivenlake und die Tapiost\u00e4rke gut vermischen. Sobald der Timer abgelaufen ist, die Mischung in die vegane K\u00e4semischung einr\u00fchren und gut verquirlen.<\/li>\n<li>Eine Minute lang weiter k\u00f6cheln lassen und dabei h\u00e4ufig umr\u00fchren. Dann sofort in die vorbereitete Form gie\u00dfen (Vorsicht: Sie wird schnell fest) und mit einem Spatel festdr\u00fccken.<\/li>\n<li>Abk\u00fchlen lassen, bis sie nur noch leicht warm ist, und dann in den K\u00fchlschrank stellen, damit der vegane K\u00e4se mindestens 2 bis 3 Stunden abk\u00fchlen und fest werden kann (am besten \u00fcber Nacht). Der Cheddar K\u00e4se-Ersatz schmeckt am zweiten Tag noch besser.<\/p>\n<p><strong>Einfrieren:<\/strong> Dieser pflanzliche K\u00e4se kann bis zu 3 Monate lang eingefroren werden, obwohl sich die Konsistenz beim Auftauen (\u00fcber Nacht im K\u00fchlschrank) leicht ver\u00e4ndern kann. Die Masse muss auch nicht 4 Minuten lang gekocht werden. Es reicht aus, wenn du es mit den \u00fcbrigen Zutaten erhitzt und maximal eine Minute k\u00f6cheln l\u00e4sst.<\/p>\n<h3>Wie mache ich veganen K\u00e4se so schmelzf\u00e4hig wie m\u00f6glich?<\/h3>\n<p>Obwohl es nicht so verbreitet ist wie Agar Agar, habe ich festgestellt, dass Kappa-Carrageenan in veganem K\u00e4se dazu beitr\u00e4gt, dass er besser schmilzt. Auch Pflanzenmilch mit viel Fett (z. B. vollfette Kokosmilch aus der Dose) liefert das beste Ergebnis.<\/p>\n<p>Er schmilzt zwar trotzdem nicht so gut wie normaler K\u00e4se (oder im Laden gekaufter veganer K\u00e4se, der viele k\u00fcnstliche Inhaltsstoffe enth\u00e4lt), aber er ist streichf\u00e4hig. Wenn du einen Ersatz f\u00fcr schmelzenden K\u00e4se suchst (z. B. \u00fcber Nachos, in Wraps, \u00fcber Lasagne usw.), probiere doch mal meine <a href=\"https:\/\/elavegan.com\/de\/vegane-kaesesauce-einfaches-rezept\/\"><strong>vegane K\u00e4sesauce<\/strong><\/a>, die in nur 3 Minuten zubereitet wird.<\/p>\n<h3>Kann ich den veganen K\u00e4se reiben?<\/h3>\n<p>Ja, du kannst diesen veganen Cheddar K\u00e4se in Scheiben schneiden und raspeln. Das raffinierte Kokosnuss\u00f6l hat n\u00e4mlich \u00fcberhaupt keinen Kokosnussgeschmack.<\/li>\n<li><strong>Agar Agar:<\/strong> Es ist wichtig, 100% reines Agar Agar zu verwenden und keine Marke die nur 30% Agar Agar (Rest Dextrose) enh\u00e4lt.<\/li>\n<li><strong>Olivenlake:<\/strong> Sie verleiht Geschmack und W\u00fcrze, \u00e4hnlich wie bei normalem K\u00e4se. Alternativ kannst du auch eine andere Lake verwenden, z. B. Sauerkrautsaft oder Wasser in Kombination mit 2 Teel\u00f6ffeln Zitronensaft\/Apfelessig.<\/li>\n<li><strong>Tapiokast\u00e4rke:<\/strong> Du kannst stattdessen auch Pfeilwurzelmehl benutzen. Es verleiht dem veganen K\u00e4se ein wenig Elastizit\u00e4t. Der K\u00e4se schmilzt jedoch nur sehr leicht. Wenn du m\u00f6chtest, dass er besser schmilzt, w\u00e4hle Kappa Carrageenan (siehe FAQs oben) anstelle von Agar Agar, da es ein besseres Ergebnis liefert.
