Verwende eine Sorte oder eine Kombination aus Kidneybohnen, schwarzen Bohnen, Pinto-Bohnen, wei\u00dfen Bohnen usw.<\/li>\n<li><strong>Gem\u00fcse:<\/strong> Dieses vegetarische Chili enth\u00e4lt Karotten (geraspelt) und Paprika (in Scheiben geschnitten &#8211; ich habe gr\u00fcne benutzt, aber rote w\u00fcrden auch funktionieren).<\/li>\n<li><strong>Gew\u00fcrze:<\/strong> Du brauchst Knoblauch und Zwiebeln.<\/li>\n<li><strong>Tomaten:<\/strong> Du kannst entweder 5-6 mittelgro\u00dfe frische Tomaten (wenn sie gerade Saison haben) oder eine Dose gehackte Tomaten (von hoher Qualit\u00e4t f\u00fcr den besten Geschmack) nehmen. Au\u00dferdem ben\u00f6tigst du etwas Tomatenmark &#8211; die Kombination aus beidem verleiht der veganen Chilisauce mehr W\u00fcrze.<\/li>\n<li><strong>Gew\u00fcrze:<\/strong> Ich habe gemahlenen Kreuzk\u00fcmmel, Zwiebelpulver, Knoblauchpulver, ger\u00e4uchertes Paprikapulver, Cayennepfeffer (oder Chilipulver) sowie Salz und Pfeffer hinzugef\u00fcgt.<\/li>\n<li><strong>Chilis:<\/strong> Ich habe frische scharfe rote Chilischoten (entkernt) verwendet. Passe die Menge nach deinem pers\u00f6nlichen Geschmack an (ich nehme eine, mein Freund bevorzugt zwei). Du kannst stattdessen auch Chilischoten aus dem Glas benutzen.<\/li>\n<li><strong>Gem\u00fcsebr\u00fche:<\/strong> Du kannst entweder Gem\u00fcsebr\u00fche oder Wasser verwenden.<\/li>\n<li><strong>S\u00fc\u00dfungsmittel:<\/strong> Zum S\u00fc\u00dfen kannst du Kokosbl\u00fctenzucker, braunen Zucker oder sogar ein fl\u00fcssiges S\u00fc\u00dfungsmittel wie Ahornsirup w\u00e4hlen. Dies gleicht den S\u00e4uregehalt der Tomaten aus und sorgt f\u00fcr einen besseren Geschmack. M\u00f6glicherweise kannst du auch ein zuckerfreies S\u00fc\u00dfungsmittel einsetzen, was ich allerdings noch nicht ausprobiert habe.<\/li>\n<li><strong>\u00d6l:<\/strong> Nimm zum Anbraten ein neutrales Speise\u00f6l (Oliven\u00f6l, Avocado\u00f6l, usw.). F\u00fcr ein \u00f6lfreies Rezept kannst du stattdessen ein wenig Wasser oder Gem\u00fcsebr\u00fche verwenden.<\/li>\n<\/ul>\n<h3>Optionale Zutaten und Rezeptvarianten:<\/h3>\n<ul>\n<li><strong>Mehr Gem\u00fcse:<\/strong> Neben Karotten und Paprika kannst du weiteres Gem\u00fcse wie Sellerie, Mais, K\u00fcrbis\/S\u00fc\u00dfkartoffeln usw. dazugeben. Beachte nur, dass sich dadurch die Kochzeit verl\u00e4ngern kann (am besten bei geschlossenem Deckel k\u00f6cheln lassen bis das Gem\u00fcse weich ist).<\/li>\n<li><strong>Chipotle:<\/strong> Wenn du anstelle der frischen Chilis Chipotle in Adobo-Sauce verwendest, erh\u00e4ltst du ein sch\u00e4rferes und rauchigeres Aroma.<\/li>\n<li><strong>Zitrusfr\u00fcchte:<\/strong> F\u00fcge dem vegetarischen Chili beim Servieren etwas frischen Zitronen- oder Limettensaft hinzu, um das Rezept aufzupeppen. Dann die Zwiebel und die Paprika 5 Minuten lang unter gelegentlichem R\u00fchren anbraten. Den Knoblauch hinzugeben und weitere 1-2 Minuten d\u00fcnsten.<\/li>\n<li>Die gehackten Tomaten dazugeben, umr\u00fchren und weitere 3-5 Minuten anbraten.<\/li>\n<li>Dann alle \u00fcbrigen Zutaten hineingeben und gut umr\u00fchren. Die Hitze leicht erh\u00f6hen und zum K\u00f6cheln bringen. Dann das vegetarische Chili unter gelegentlichem R\u00fchren etwa 30 Minuten k\u00f6cheln lassen.<\/li>\n<\/ul>\n<p>Wenn das Chilli sin Carne zu sehr eindickt, kannst du ein wenig mehr Gem\u00fcsebr\u00fche\/Wasser dazugie\u00dfen. Die Aromen verbinden und entwickeln sich w\u00e4hrend dieser Zeit, also versuche nicht, diesen Schritt zu \u00fcberspringen.<\/p>\n<ul>\n<li>Zum Schluss das vegane Chili abschmecken und die Gew\u00fcrze nach eigenem Geschmack anpassen. F\u00fcr ein cremigeres Chili kannst du 1 &#8211; 1 \u00bd Tassen des Chilis aus dem Topf nehmen, mit einem P\u00fcrierstab glatt p\u00fcrieren und wieder in den Topf geben. Weiche die Bohnen ein, koche sie und lagere sie dann (portioniert) f\u00fcr mehrere Monate im Gefrierschrank. Dann kannst du sie direkt aus dem Gefrierfach in das vegane Chili geben oder \u00fcber Nacht auftauen.<\/p>\n<p><strong>Aufbewahren:<\/strong> Lasse das Chili sin Carne etwas abk\u00fchlen und bewahre es dann in einem luftdichten Beh\u00e4lter im K\u00fchlschrank f\u00fcr 4-5 Tage auf. \u00dcbrigens: Am zweiten Tag schmeckt es noch besser!<\/p>\n<p><strong>Einfrieren:<\/strong> Dieses vegane Chili con Carne l\u00e4sst sich bis zu drei Monate lang einfrieren. Bewahre es in einem luftdichten Beh\u00e4lter auf und lasse es \u00fcber Nacht im K\u00fchlschrank auftauen, bevor du es wieder aufw\u00e4rmst. Wenn du einzelne Portionen einfrieren m\u00f6chtest, kannst du das Chili in Muffinf\u00f6rmchen geben (verwende Silikon, damit es sich leichter herausnehmen l\u00e4sst) &#8211; friere es ein, bis es fest ist, und gib es dann in einen Beutel.
