Die zus\u00e4tzliche Puddingschicht in Kombination mit den fruchtigen, s\u00fc\u00dfen Beeren und der Streuselschicht machen dieses gesunde Dessert zu einer wahren S\u00fcnde.<\/p>\n<p>Und das Beste ist, dass dieser vegane Himbeer-Streuselkuchen haupts\u00e4chlich aus Grundzutaten aus der Speisekammer zubereitet wird. Du kannst frische oder gefrorene Himbeeren verwenden oder sie gegen andere Beeren und Fr\u00fcchte austauschen &#8211; und das ganze Jahr \u00fcber genie\u00dfen!<\/p>\n<p>Man kann den Kuchen zum Fr\u00fchst\u00fcck, als Snack oder als Dessert genie\u00dfen &#8211; perfekt zu einer Tasse Tee\/Kaffee oder bei Potlucks und Picknicks!<\/p>\n<p>Und da der Teig sowohl f\u00fcr den Boden als auch f\u00fcr die Streusel geeignet ist, gibt es weniger Arbeitsschritte und weniger Abwasch &#8211; ein gro\u00dfer Vorteil! Du brauchst ganze Haferflocken und Hafermehl.<\/li>\n<li><strong>Gemahlene Mandeln:<\/strong> Ich empfehle gekaufte blanchiertes gemahlene Mandeln. Alternativ kannst du auch andere gemahlene N\u00fcsse ODER Kerne (wie Haseln\u00fcsse\/Sonnenblumenkerne) verwenden. Unges\u00fc\u00dfte Kokosraspeln sind ebenfalls geeignet, aber benutze kein Kokosmehl.<\/li>\n<li><strong>Zerdr\u00fcckte Banane:<\/strong> Diese dient als Bindemittel anstelle von Ei. Alternativ kannst du auch Apfelmus nehmen. F\u00fcr einen lockeren, butterweichen Teig kannst du 40 g Banane (oder Apfelmus) und 40 g vegane Butter (oder Margarine) verwenden.<\/li>\n<li><strong>Fl\u00fcssiges S\u00fc\u00dfungsmittel<\/strong> wie Ahornsirup, Agavendicksaft, brauner Reissirup, usw. Alternativ kannst du auch Sojasahne verwenden. Am besten eignet sich eine 18 x 28 cm oder eine 20 x 20 cm gro\u00dfe quadratische Backform.<\/li>\n<li>Danach alle Teigzutaten in einer R\u00fchrsch\u00fcssel mit den H\u00e4nden oder einem Handr\u00fchrger\u00e4t vermischen.<\/li>\n<li>Nun 2\/3 des Teigs in den Boden der vorbereiteten Form dr\u00fccken, sodass eine gleichm\u00e4\u00dfige Schicht entsteht. Nach dem Aufkochen den Pudding 30-60 Sekunden lang unter h\u00e4ufigem R\u00fchren k\u00f6cheln lassen, bis er eindickt. Anschlie\u00dfend vom Herd nehmen.<\/li>\n<li>Den Pudding sofort \u00fcber die Himbeerschicht gie\u00dfen und mit einem Teigschaber glattstreichen.<\/li>\n<\/ul>\n<h3>Schritt 4: Die Streusel dar\u00fcber streuen und backen<\/h3>\n<ul>\n<li>Den restlichen Teig als Streusel auf dem Himbeer-Streuselkuchen verteilen.
