Und ich kann dir sagen, wir haben jede Menge, eigentlich zu viele, haha! Das bedeutet, dass ich laufend K\u00fcrbis-Rezepte wie <strong><a href=\"https:\/\/elavegan.com\/de\/nudelauflauf-mit-kuerbis\/\">K\u00fcrbis-Nudelauflauf<\/a><\/strong> und <strong><a href=\"https:\/\/elavegan.com\/de\/kuerbisbrot-rezept\/\">K\u00fcrbisbrot mit Schokodrops<\/a><\/strong> genie\u00dfe und auch neue Gerichte wie dieses indische K\u00fcrbis-Kokos-Curry ausprobiere.<\/p>\n<p>Vegane Curry-Rezepte geh\u00f6ren zu meinen allerliebsten Herbst-\/Wintergerichten, vor allem die Varianten <strong><a href=\"https:\/\/elavegan.com\/de\/kichererbsen-curry-veganes-rezept\/\">Auberginen-Kichererbsen-Curry<\/a><\/strong>, <strong><a href=\"https:\/\/elavegan.com\/de\/gemuesecurry-rezept-kokosmilch-ananas\/\">Gem\u00fcsecurry mit Ananas<\/a><\/strong> und auch <strong><a href=\"https:\/\/elavegan.com\/de\/thai-kokos-suppe\/\">Thai-Kokos-Suppe<\/a><\/strong>. Dieses cremige gelbe Curry enth\u00e4lt jedoch nicht die thail\u00e4ndischen Aromen, die in vielen beliebten K\u00fcrbis-Curry-Rezepten vorkommen, sondern greift stattdessen auf klassische indische Gew\u00fcrze und Currypulver zur\u00fcck. In Kombination mit der cremigen Sauce ist dieses K\u00fcrbiscurry sehr aromatisch, geschmackvoll und s\u00e4ttigend, ohne schwer im Magen zu liegen.<\/p>\n<p>Die Kombination aus den verschiedenen Zutaten und Gew\u00fcrzen ergibt das perfekte Curry-Gericht f\u00fcr den Herbst und ist eine tolle Mahlzeit f\u00fcr jede Party oder eine einfache Mahlzeit unter der Woche mit Naan Brot und Reis (oder einer Getreidebeilage nach Wahl). Ich habe es zu Hause selbst hergestellt (Anleitung in den Rezept-Anmerkungen); du kannst aber auch K\u00fcrbisp\u00fcree aus der Dose nehmen (vor allem, wenn es dir nichts ausmacht, keine groben K\u00fcrbisst\u00fccke im Gem\u00fcse-Curry zu haben). Wenn du frischen K\u00fcrbis verwendest, achte darauf, dass du einen Speisek\u00fcrbis (z. B. Zuckerk\u00fcrbis oder Hokkaido K\u00fcrbis) kaufst. Kabocha K\u00fcrbisse eignen sich ebenfalls.<\/li>\n<li><strong>Passata:<\/strong> Wenn du keine Passata da hast, verwende Tomatenp\u00fcree (kein Mark) oder Tomatensauce.<\/li>\n<li><strong>Br\u00fche:<\/strong> Ich habe Gem\u00fcsebr\u00fche genommen. W\u00e4hle eine natriumarme Br\u00fche, wenn du das m\u00f6chtest.<\/li>\n<li><strong>Kokosmilch:<\/strong> Ich bevorzuge Kokosmilch mit h\u00f6herem Fettgehalt, um die cremigste Konsistenz zu erzielen, du kannst aber auch fettreduzierte Kokosmilch nehmen, wenn du m\u00f6chtest. Wenn du den Kokosgeschmack nicht magst, nimm pflanzliche Sahne (wie Hafersahne oder Sojasahne).<\/li>\n<li><strong>Gew\u00fcrze:<\/strong> Currypulver (w\u00e4hle deine gew\u00fcnschte Sch\u00e4rfe &#8211; entweder mild, mittelscharf oder scharf), gemahlener Kurkuma, gemahlener Kreuzk\u00fcmmel, R\u00e4ucherpaprika sowie Salz und Pfeffer. Anstelle des Currypulvers kannst du auch Garam Masala einsetzen.<\/li>\n<li><strong>Aromen:<\/strong> F\u00fcr dieses einfache One-Pot-Curry wird die indische &#8222;Triologie&#8220; &#8211; Zwiebel (oder Schalotte), Knoblauch und Ingwer &#8211; ben\u00f6tigt.<\/li>\n<li><strong>Gem\u00fcse:<\/strong> Ich habe Karotten, Paprika und Gr\u00fcnkohl verwendet.<\/li>\n<li><strong>\u00d6l:<\/strong> Benutze ein beliebiges neutrales Speise\u00f6l. F\u00fcr eine \u00f6lfreie Variante kannst du auch Wasser nehmen.<\/li>\n<li><strong>Zum Servieren:<\/strong> Ich garniere das K\u00fcrbis-Curry gerne mit frischen Kr\u00e4utern wie Petersilie oder Koriander, Zitronen- oder Limettensaft (oder -spalten) und serviere etwas Reis dazu.<\/li>\n<\/ul>\n<h3>Optionale Zutaten und Rezeptvarianten:<\/h3>\n<ul>\n<li><strong>Variiere die Gem\u00fcsesorten:<\/strong> Brokkoli und Erbsen sind andere beliebte Curry-Zus\u00e4tze von mir. Weitere Optionen sind gr\u00fcne Bohnen, Bok Choy, Auberginen, Spargel, Blumenkohl, S\u00fc\u00dfkartoffeln, Kohlgem\u00fcse usw.<\/li>\n<li><strong>F\u00fcr die Sch\u00e4rfe:<\/strong> Je nachdem, wie scharf du gelbes Curry magst, kannst du frische Chillischoten (gleichzeitig mit Knoblauch und Ingwer), Chilipaste oder Chili-\/Cayennepulver hinzuf\u00fcgen.<\/li>\n<li><strong>Zimt:<\/strong> Eine gro\u00dfe Prise Zimt (ca. 1\/4 Teel\u00f6ffel) kann der Kokos-Curry-Sauce noch mehr Geschmack verleihen.<\/li>\n<li><strong>Kokosnuss:<\/strong> F\u00fcr ein Curry mit K\u00fcrbis nach s\u00fcdindischer\/ srilankischer Art kannst du 1\/3-1\/2 Tasse Kokosraspeln hinzugeben. R\u00f6ste einige Essl\u00f6ffel in einer trockenen Pfanne leicht an, bis sie sch\u00f6n goldbraun und knusprig sind, und garniere damit das Gericht. Oder du r\u00f6stest alle Kokosraspeln, zerkleinerst sie dann in einer K\u00fcchenmaschine und mischst sie unter das Curry.<\/li>\n<li><strong>Thail\u00e4ndische Variante:<\/strong> Tausche das Currypulver gegen eine gelbe oder rote Thai-Currypaste aus (passe die Menge je nach Geschmack an).<\/li>\n<li><strong>Proteine:<\/strong> Meine Lieblingsvariante f\u00fcr dieses vegane Curry ist die Zugabe von Kichererbsen. Du kannst aber auch Linsen, andere H\u00fclsenfr\u00fcchte, Tempeh oder sogar extra festen Tofu dazu geben!<\/li>\n<li><strong>N\u00fcsse\/Samen:<\/strong> Einige leicht ger\u00f6stete Cashewkerne oder K\u00fcrbiskerne sind eine leckere Erg\u00e4nzung zu diesem herzhaften indischen K\u00fcrbiscurry. Gleichzeitig den Ingwer und den Knoblauch sch\u00e4len und fein hacken.<\/li>\n<li>Anschlie\u00dfend das \u00d6l (oder einen Spritzer Wasser) in einer gro\u00dfen Pfanne bei mittlerer Hitze erw\u00e4rmen. Sobald es hei\u00df ist, die Zwiebeln, Karotten und Paprika hinzugeben. 4-5 Minuten lang anbraten, dabei h\u00e4ufig umr\u00fchren.<\/li>\n<li>Knoblauch und Ingwer einr\u00fchren und eine weitere Minute anbraten.<\/li>\n<li>Dann alle Gew\u00fcrze, Passata, K\u00fcrbisp\u00fcree, Gem\u00fcsebr\u00fche und Kokosmilch hinzugeben. Gut umr\u00fchren, dann die Mischung zum K\u00f6cheln bringen und die Hitze reduzieren.<\/li>\n<li>Das gelbe Curry weitere 5-8 Minuten k\u00f6cheln lassen oder bis das Gem\u00fcse weich ist.<\/li>\n<\/ul>\n<p>Optional kannst du jetzt Kichererbsen\/Bohnen aus der Dose f\u00fcr zus\u00e4tzliches Eiwei\u00df dazugeben. B. mehr Salz und Pfeffer, rote Chiliflocken oder Chilipulver f\u00fcr mehr Sch\u00e4rfe usw. hinzutun. Dann den Knoblauch und den Ingwer dazugeben und eine weitere Minute anbraten. Dann alle Gew\u00fcrze hinzuf\u00fcgen und noch einmal umr\u00fchren.<\/li>\n<li>Passata, K\u00fcrbis, Br\u00fche und Kokosmilch hinzugie\u00dfen, umr\u00fchren, den Deckel schlie\u00dfen und zwei Minuten lang auf MANUELL kochen. Sobald der Kochvorgang abgeschlossen ist, den Dampf schnell ablassen (quick release) und den Deckel vorsichtig \u00f6ffnen.<\/li>\n<li>Wenn du Kichererbsen untermischen willst, tu das jetzt, zusammen mit dem gehackten Gr\u00fcnkohl. F\u00fcr eine kohlenhydratarme Variante eignet sich Blumenkohlreis. Manchmal serviere ich Curry-Rezepte auch zusammen mit Vorspeisen wie <strong><a href=\"https:\/\/elavegan.com\/de\/vegane-fruehlingsrollen-selber-machen\/\">Fr\u00fchlingsrollen<\/a><\/strong>.<\/p>\n<p>Wenn du deine Variante dieses indischen K\u00fcrbiscurrys zu scharf gew\u00fcrzt hast, kannst du auch einen Klecks unges\u00fc\u00dften pflanzlichen Joghurt dar\u00fcber geben.<\/p>\n<h2>Wie aufbewahren?<\/h2>\n<p><strong>Aufbewahren:<\/strong> Das vegane Curry abk\u00fchlen lassen, dann in einen luftdichten Beh\u00e4lter f\u00fcllen und im K\u00fchlschrank 3-4 Tage oder im Gefrierfach 2-3 Monate aufbewahren. Am zweiten Tag schmeckt dieses Curry sogar noch besser!<\/p>\n<p><strong>Aufw\u00e4rmen:<\/strong> Du kannst das Gem\u00fcse-Curry auf dem Herd oder in der Mikrowelle aufw\u00e4rmen, bis es richtig warm ist. Reibe den K\u00fcrbis dann mit etwas \u00d6l ein und backe ihn bei 205 \u00b0C f\u00fcr 40-60 Minuten oder bis er weich ist.
